It’s hard to believe but it’s been two years since I took a leap of faith and began this food blogging journey. Last year I wrote a piece on the one year anniversary, still feeling my way through after reading articles like ‘How to Start a Blog’ in just a few ‘easy’ steps. In case you’re wondering, it’s not easy and also contrary to the article, it’s not free. In the last 12 months my support system grew from my family and friends, to fellow bloggers I now consider friends, like Kelly at The Hungry Bluebird, as well as faithful, supportive readers, like Mary and for all of you I’m so grateful. Last year in lieu of a celebratory birthday cake, I shared one of my favorite savory meals, an easy Soppressata Pizza. This year we’ll blow out a candle (or two) on these Reuben Wonton Cupcakes. If the thought of a Reuben sandwich excites you as much as it does me, then Reuben Wonton Cupcakes are for you. They’re my single most requested recipe and vanish in a snap every time I make them.
The inspiration for this recipe is partly from many girls’ lunches and dinners at California Pizza Kitchen and one of their classics, the Avocado Club Eggroll. If you’ve never been to Cali Pizza, it’s time. The menu goes way beyond creative pizza and salads. Maybe they should change their name to California Pizza and Lots of Other Good Food Kitchen. But that’s for another post. The tasty filling for these Chicken Avocado Club Wontons is nestled in a mini wonton cup, then baked not fried so they’re a bit healthier, leaving room for wine. . .and dessert.

Even if you’re not a football fan, it’s hard to avoid the fact that the Super Bowl is this Sunday. I’ll tune into the game, but I’m really excited about the commercials that range from funny to tugging on heart-strings and of course, the best part ~ the football food. It’s been several years since I was introduced to the world of wonton wrappers by my niece and became instantly addicted to her Sausage Wontons – mmmm so darn good.
