I don’t know about you, but my head is almost spinning thinking December is here and I’ve hardly started my Christmas shopping. I talked to my sister-in-law today and her shopping is completely done. Which camp are you in? It’s such a fun time of the year but when I have a lot going on, I love a recipe that’s not only super easy and delicious, but foolproof and just four ingredients,  like this Baked Brie, Pear, Onion Jam Bites. I know it’s a mouthful, but what else could I call them? Mini pre-made phyllo cups filled with warm, creamy baked brie topped with caramelized onion jam & tangy diced fresh pear. It’s beyond easy but tastes deliciously elegant, pairs really well with a nice Pinot Grigio and oh yeah it’s worth repeating. . .it’s just four ingredients.

If you have young kids in the house, this is the ideal appetizer to enlist their help. They’re easy to assemble and bake in just a few minutes.

The list ~

  • Mini phyllo cups
  • Brie cheese
  • One Pear
  • Onion Jam

There are a variety of onion jams on the market ~ some with balsamic, others not. Any of them are ideal. Some grocery stores carry onion jam now as well as T.J. Maxx and specialty stores, like SurLaTable.  It’s worth grabbing a jar or two. It’s also really good on a grilled cheese sandwich.

Dice the pear into small cubes, leaving the skin on. Place several cubes of pear over the Brie and press the fruit gently into the cheese being careful not to crush or crack the cups.

Top with a very small dollop of jam (this jam has lots of flavor, so you don’t need much) and bake 8-10 minutes or until the cheese is melted. Baked Brie, Pear, Onion Jam Bites is my first recipe kicking off the holiday season. Throughout the month I’ll be sharing more easy appetizers, some cocktails and of course my favorite holiday main dishes. Enjoy and come on back!
