Everyone has their own idea of what makes the single Best Cheeseburger, but there are a couple of things we can all agree on: the burger need to be juicy and it needs to be delicious. Beyond that, whether beef, turkey, even veggie – in my book they also need a layer of melted cheese. The ingredients in this recipe may raise an eyebrow, but you’ll have to trust me on this  ~ they come together in grilled perfection. Nothing fancy. Nothing finer.

For us, summertime means the two B’s: boating and barbecue. We grill pretty much anything from burgers to pizza, steak to seafood and some veggies in between for good measure, especially when Sweet Corn is in season.

A few TIPS before we get started:

  1. About 20% fat in the beef makes a juicier burger.
  2. Wait to salt the burger until just before grilling because salt will extract moisture from the meat leaving it dry.
  3. Flip the burger just once.
  4. Don’t flatten the burger with a spatula ~ again, the juicy factor.

Best Cheeseburger Ingredients:

  • 1 1/4 pound ground chuck
  • 1 good size clove of garlic, grated
  • 1 small onion finely diced
  • 1 1/2 T half-and-half OR whole milk
  • 3 dashes of Tabasco ** see NOTE below
  • Salt and fresh cracked black pepper to taste
  • 1 tablespoon of butter, chopped into very small pieces (similar to the eraser on the end of a pencil)
  • Hamburger buns (Kaiser or whole grain preferred)
  • Cheese for topping
  • Other toppings of your choice: lettuce, tomato, onion, bacon

Ladies, grilling isn’t strictly for men. It’s a great chance for anyone to enjoy a beautiful sunny day, cold beverage in hand though when a man offers to take over the cooking duties, who are we to argue?

Combine the beef, garlic, onion, half and half OR milk, Tabasco and butter without over handling. The milk or half and half helps the garlic spread throughout the beef.

NOTE: if you don’t have Tabasco, you can substitute buffalo sauce as well. Gently form the beef into patties, then lightly press your thumb into the center of the burger, making a small well. This eliminates the mound in the center of the burger as it cooks.

Generously season both sides with salt and pepper just before cooking.

Once the grill is hot, place the patties on the grill, then hands off for a few minutes allowing them to sear before flipping them. Add whatever cheese you choose and if you’d like (I do!) grill the buns until they’re lightly toasted.

This burger is topped with Smoked Gouda, tomato, mustard and some greens in lieu of the lettuce I forgot to buy. It happens. Of course, a classic dill on the side rounds out the ensemble.

The Best Cheeseburger has been a hit since our days we owned a cottage in Michigan’s Thumb.  If possible start with fresh, never frozen beef for the best flavor. That said, I usually have a stash frozen patties because you never know people will stop by or when you’ll need an easy weeknight meal.  

If you’re having friends or family over, the Best Cheeseburger is practically guaranteed to make you look like a grilling guru and if you need a classic side with this burger, my pick is old-fashioned, just like grandma’s Potato Salad.

Ingredients
  1. 1 - 1 1/4 pound ground chuck
  2. 1 good size clove of garlic, grated
  3. 1 small onion finely diced
  4. 1 1/2 T half and half OR whole milk
  5. 3 dashes Frank's Red Hot Buffalo sauce (Tabasco works fine too)
  6. Salt and fresh cracked black pepper to taste
  7. 1 T COLD butter, chopped into very small pieces (similar to the eraser on the end of a pencil)
  8. Hamburger buns (Kaiser or whole grain preferred)
  9. Cheese for topping
  10. Other toppings of your choice: lettuce, tomato, onion
Instructions
  1. Mix the meat, garlic, onion, milk, hot sauce, butter and salt/pepper together in a bowl.
  2. Score the mixture so you have four equal parts.
  3. Form the patties without over-handling the meat and using your thumb make an indentation in the center of the patty (so the burger doesn't puff in the middle).
  4. Season the outside of the burgers with salt and pepper.
  5. Allow the burgers to come to room temperature and once the grill is preheated, place the burgers the rack and grill, turning just once.
  6. Toast the buns for a few minutes just before the burgers are done.
  7. Top with your favorite cheese, lettuce, tomato, onion -- as desired.
