I don’t need a good dip to enjoy potato chips; they stand alone as one of my favorite snacks, though you’ll never see me turn away a good dip. I’ve bought more tubs of prepared French onion chip dip than I care to admit to. I’m a fan of “Crack Dip” too ~ the latest dip circulating on Pinterest. It’s called that for a reason. Blue Cheese Bacon Caramelized Onion Dip takes dips to a whole new level. I had it in a restaurant and from the first bite I knew I would recreate it when I got home. ASAP.  Like yesterday. The restaurant served it with their own salt and vinegar chips, but if you don’t care for the tang of vinegar, thick ruffled chips will get the job done or even a few fresh veggies. Tangy sour cream, sweet caramelized onions, bacon and the bold sharpness of blue cheese is so good you’ll want to eat it by the spoonful. . .

In my opinion, a party is incomplete without dip. Dip has some sort of magic that says “let’s get this party started”! If you’re short on time, it’s perfectly acceptable to pick up dip from the grocery store, but you guys, this Blue Cheese Bacon Caramelized Onion Dip is definitely worth the few minutes it takes to make and I’ve never seen anything like it in any grocery store.

Here’s the list of ingredients:

  • 1 tablespoon of butter
  • 1 cup of red onion, very thinly sliced
  • ½ teaspoon of brown sugar
  • 1 tablespoon of balsamic vinegar
  • A pinch of salt and pepper
  • 1 cup of sour cream
  • 2 ounces of cream cheese
  • 1/3 cup of blue cheese
  • 2 tablespoons of real bacon bits
  • Salt and pepper to taste

It just so happened I made this Blue Cheese Bacon Caramelized Onion Dip on the night one of my favorite TV shows was on, Grey’s Anatomy. I know, I know, McDreamy is gone. McSteamy is gone. The show’s been on for what 100 years now? But Meredith is still powering on without any of them, including her ‘person’ Christina Yang. Like the Crack Dip and this Blue Cheese Bacon Caramelized Onion Dip ~ I’m hooked on that show!

Anyway, let’s get this party dip started!

Blue Cheese Bacon Caramelized Onion Dip: tangy sour cream, sweet caramelized onions, bacon and the bold sharpness of blue cheese. What every party needs.First slice the onion as thin as possible. Melt the butter in a skillet over medium heat and add the onions, a few cracks of black pepper, a small pinch of salt and the brown sugar (the sugar helps the onions caramelize). Potato chips are already salty, so you don’t want to overdo the salt. Sauté the onions over medium-low heat, allowing them to brown and caramelize, intensifying their flavor.

While the onions are sautéing, blend the softened cream cheese and sour cream, then fold in the blue cheese and bacon.

What every party needs.When the onions have caramelized, pour the balsamic over them, stirring and continuing to cook over low heat 2 minutes. Transfer the caramelized onions to a cutting board, allow them to cool, then rough chop them and add to the dip. Blend everything together, taste and add salt and/or pepper as necessary. Refrigerate the Blue Cheese Bacon Caramelized Onion Dip at least 30 minutes or up to overnight.

This recipe is very close to the restaurant version. You can’t see me, thankfully, but I’m patting myself on the back. It’s so good not only did I lick the spoon, but I scraped the last of the dip out of the bowl using my finger.

Ingredients
  1. 1 tablespoon of butter
  2. 1 cup of red onion, very thinly sliced
  3. ½ teaspoon of brown sugar
  4. 1 tablespoon of balsamic vinegar
  5. Salt and pepper
  6. 1 cup of sour cream
  7. 2 ounces of cream cheese or ¼ of a brick, room temperature
  8. 1/3 cup of blue cheese
  9. 2 tablespoons of real bacon bits
Instructions
  1. Slice the onion as thin as possible.
  2. Melt the butter in a skillet over medium heat then add the onions, a few cracks of black pepper, a small pinch of salt and the brown sugar.
  3. Sauté the onions over medium-low heat, allowing them to brown and caramelize.
  4. Blend the softened cream cheese and sour cream, then fold in the blue cheese and bacon bits.
  5. When the onions have caramelized, pour the balsamic over them, stirring and continuing to cook over low heat 2 minutes.
  6. When the onions are finished, transfer them to a cutting board.
  7. Let them cool then rough chop them and add them to the dip.
  8. Blend, taste and add salt and/or pepper as necessary.
  9. Refrigerate at least 30 minutes or up to overnight.
  10. Serve with salt and vinegar chips or whatever is your favorite.
