Do you have a favorite neighborhood restaurant? Ours is Pier III, family owned and our local version of  Cheers, the place in the old TV series where everyone knows your name. Everyone may not know our name there, but we usually see someone we know.

They make a mean Mediterranean Nacho at the Pier ~ layers of pita chips topped with seasoned lamb, tzatziki, tomatoes and olives and it serves as the inspiration for this dish. If you’ve never had a Greek Nacho but enjoy the flavors of a classic Greek Salad, Greek Chicken Pita Nachos is your dish.

Feel free to substitute lamb for a more authentic Mediterranean flair (although the term ‘Mediterranean Nacho’ is really a clash of cultures anyway) and for an even easier recipe, rotisserie chicken and packaged tzatziki sauce are your man, er men.

Layers of warm toasted pita chips, shredded seasoned chicken, sautéed bell peppers and onions all topped with feta cheese, creamy tzatziki and diced tomatoes and cucumber. Oh ~ and a pinch of dill ~ Opa!

Greek Chicken Pita Nachos Ingredients:

  • 1 cup tzatziki ~ homemade or store-bought
  • Olive oil
  • 2 chicken breasts
  • 1 1/2 teaspoons of Greek seasoning
  • 1/2 lemon, juiced
  • 3/4 cup of chicken stock
  • 1/2 cup of sliced red onion
  • 1/2 of a bell pepper (any color), sliced
  • 3 – 8″ pitas
  • Cooking spray (I used the olive oil type)
  • Sea salt
  • ½ cup of feta cheese, crumbled
  • 1 cup of diced tomatoes
  • 1 cup of English cucumber, chopped (skin on)
  • ¼ cup of kalamata olives, sliced
  • 1 tablespoon of dill (fresh or dried are fine)

Instructions:

Drizzle about a tablespoon or so of olive into a skillet and while it’s warming over medium-high heat, season the chicken breasts with Greek seasoning and sear on both sides.

Lower the heat, squeeze lemon juice over top of the chicken and add the stock. Cover and cook over low heat 8-10 minutes or until the chicken is cooked through.

Remove the chicken from the skillet and while it’s cooling, sauté the onions and peppers in the same skillet. When the chicken has cooled, shed it using two forks or your fingers.

Heat the oven to 375°. Cut the pita into triangles (about the size of tortilla chips) and place in a single layer on a baking sheet (use parchment paper or foil for easy cleanup). Lightly spray each triangle with cooking spray and top with a small pinch of sea salt. Bake 5 minutes or until they’re warm and toasted.

Assemble:

You can be totally casual with this dish and assemble it right on the baking sheet or if you’d like, transfer the chips to a platter and top the warm chips with a small amount of tzatziki, chicken, onions, peppers, feta cheese, more tzatziki, tomatoes, cucumber, olives and a light sprinkle of dill to finish it off and extra tzatziki on the side.

Greek Chicken Pita Nachos is a fingers-only, we are all friends dish. It’s ideal when you want a light, fun dinner any night, even in front of the TV binging on your favorite Netflix series. It also make a healthy appetizer for a small Super Bowl crowd.
