Is it just me or are you double checking the calendar to make sure Thanksgiving really is next week? The year is going so fast and with the holidays can come overeating (insert frown). No worries ~ I’m not going to give you a health food lecture. I love junk food more than I should even though I know when I eat smarter I feel better. In an effort to offer a balance between the Cranberry Chocolate Chip Cookies and Baklava Cups I posted recently, Spicy Baked Salmon is an easy, healthy, protein-packed meal and most important, it’s really delicious. With just four ingredients, it goes from oven to table in under 20 minutes.

Spicy Baked Salmon is also a really great no-fail meal to entertain with. I like it with brown rice (Uncle Ben’s 90 second version is ideal) and some sautéed kale mix like you see in the photos. One of my favorite parts of this Spicy Baked Salmon recipe is that it calls for just 4 ingredients (plus the salmon) ~ stuff you may already have on hand. 

  • 2 tablespoons of brown sugar
  • 1 lemon, sliced
  • 1 tablespoon of sriracha
  • 1 tablespoon of balsamic vinegar
  • 2 salmon filets, each about checkbook size

The greens ⇑ are part of an Eat Smart Kale Salad Kit which is really great cold but sautéed in a little olive oil it becomes a really good warm side dish. I buy these bagged salads at Sam’s Club which also happens to be the best place to buy salmon! I don’t have a Costco membership, but I’ve heard rave reviews about their salmon as well. It’s always fresh, reasonably priced and it’s the last store I’ve found that sells salmon with the skin already removed. I buy a whole filet and slice it into individual servings for the freezer.

Just a couple of quick steps to Spicy Baked Salmon:

Preheat the oven to 400° then season the salmon filets with salt and pepper. Lightly spray a shallow baking dish with cooking spray, arrange the lemon slices on the bottom of the dish and place the salmon on top.

In a small bowl whisk the brown sugar, sriracha and balsamic together then pour it over the top of the salmon. Using a pastry brush (or spoon if you don’t have one)  coat the salmon with the sauce across the top and on all exposed sides.

Bake 12-15 minutes or until the salmon is cooked.
