Do you remember outdoor drive-in movies? I used to love going when I was a little girl. We’d always wear our pajamas to the drive-in and pop our own popcorn before we left. Years later we took our kids a few times before drive-ins became extinct. Last Friday night our neighbors hosted their last outdoor movie night of the season in their backyard ~ like a drive-in, but with chairs instead of cars. There’s usually about 20 or so people, an oldie-but-a-goodie mindless sort of movie, plenty of food to eat before the movie starts and even popcorn and candy during the movie. These people know how to do movies right! It started out as a beautiful evening, but got cold quickly and even the bonfire and the pot of spicy Homemade Chili I contributed didn’t provide as much warmth as we needed. The next day as I wondered why on earth I ate so much and was still trying to get rid of the chill I felt, Spicy Tomato Lentil DETOX Soup was born. . .

I’ve been trying to watch my diet a little more closely lately because with the holidays coming, I know I’ll be eating. . . more than usual. If you made a resolution to eat a little lighter ~ a little healthier ~ before the onset of all that holiday goodness, Spicy Tomato Lentil DETOX Soup is for you. It’s no means scientifically proven as a detox soup but it’s packed with vegetables like carrots, spinach and tomatoes, along with lentils, beans and garlic and spiced up with jalapeno and habanero (supposed to be the hottest pepper in the world!) from our garden. Even though I only added the tiniest sliver of habanero, I swear I could taste the heat!

The Ingredients:

  • olive oil
  • 2 stalks of celery
  • 2 medium carrots
  • 1 medium onion
  • 1 green pepper, seeded and chopped
  • 2 cloves of garlic, grated
  • 1-2 fresh jalapeno peppers (depending on size and your heat preference)
  • 1 slice of habanero about the size of a toothpick, finely minced (OPTIONAL)
  • 1 cup of lentils
  • 2 teaspoons of chili powder
  • 1 teaspoon of cumin
  • 1 – 14 ounce can of diced tomatoes
  • 1 – 8 ounce can of tomato sauce
  • 1 can of Great Northern beans
  • 2 cups of fresh spinach, rough chopped
  • 4 cups of chicken stock
  • 1/2 cup of fresh cilantro, finely chopped

Check your refrigerator and pantry before you shop for the ingredients for Spicy Tomato Lentil DETOX Soup because there are easy substitutions that still maintain the flavor and health benefits and let’s face it ~ soup is a great way to use up things you already have on hand. Here are just a few alternatives:

  • zucchini
  • squash
  • other canned beans like kidney or garbanzo
  • kale instead of spinach

Most soups start with humble beginnings ~ carrots, celery and onions ~ and this one is no different. Warm a drizzle olive oil in whatever you make soup in and add the carrots, celery, onion, green pepper, garlic, jalapeno and (OPTIONAL) habanero. Season with salt and pepper and cook several minutes until the onions have softened.

Fold in the lentils, tomato paste, chili powder and cumin, cooking 3-4 minutes. Add the diced tomatoes, tomato sauce and chicken stock continue to simmer a few more minutes. Transfer 2 cups of the Spicy Tomato Lentil DETOX Soup to a blender or using an immersion blender, give the soup several good pulses to thicken it. If you used a regular blender puree then return the blended soup to the pot.

Add the spinach, beans and cilantro. Cover and cook about 10 minutes or until the carrots are fork-tender. That’s it. Enjoy Spicy Tomato Lentil DETOX Soup with a slice or two of fresh whole grain bread and if you want to grate some cheese over the top, no one around here will judge you. This is truly a delicious comfort meal you can feel good about eating for dinner and if you have leftovers, it makes a great lunch too!

    This recipe doesn’t say how long to cook lentils. Package says 40 minutes.

      Hi Queen – thanks for checking out the recipe and bringing this to my attention. I’m sorry for the confusion. I hope this clarifies things.

      The lentils are added to the soup along with tomato paste, chili powder and cumin, cooking 3-4 minutes. 

      I then add the diced tomatoes, tomato sauce and chicken stock and continue simmering about 10 minutes (the recipe says ‘a few more minutes’ which is vague).

      At that point you’ll use the immersion blender (my personal preference), pulsing to thicken it.

      The spinach, beans and cilantro are then folded in, the pot covered and the cooking continues approximately 10 minutes. At this time the carrots and lentils should be tender.

      If you find they aren’t tender, continue cooking another 5 minutes then taste and if necessary adjust the salt if needed.
