Greek Layered Appetizer ~ hummus, tzatziki, olives and feta layered for a simple, healthy dip. Add chicken for a light entrée.

A weekend in Northern Michigan for a girls’ wine weekend meant lots of laughs and good food. Everyone brought their favorite wine, dishes to share and . . . I did mention wine? There was plenty.

Chips and dip and sheet pans of pizza rolls with ranch dressing were brought out for late nights. We could have used a healthy appetizer like this Greek Layered Dip. I guess that’s why there’s “next time”.

I haven’t sworn off tahini and have nothing against it, but the last time I bought it I could only find it in a super size jar that could have easily come off the shelves of Sam’s Club (but didn’t). I couldn’t use it all before the expiration date and ended up throwing a good portion of it away.

When we were in Florida last March, I bought a container of the local grocery store’s own hummus and was really disappointed ~ thick, tasteless and a little clumpy ~ whaaat? I swore when I got home I would make the kind of hummus I like to eat ~ creamy, full of flavor with just a hint of lemon.

This Easy Hummus Recipe rivals any I’ve had with tahini and since I usually have everything on hand to make it, it’s easier than a trip to the store for pre-packaged and takes about as much time.

As folk lore goes dating back to the Civil War, eating black eyed peas on New Year’s day is said to bring good luck and prosperity in the new year. Like many recipes on this blog, this recipe is simplified with everyday grocery store ingredients without sacrificing flavor. 

Black . Peas are a good source of fiber, but hey ~ this stuff just tastes good. With so many healthy recipes out there that actually taste good, why go any other route?
