When it comes to sharing recipes, sometimes I overlook the obvious, like these Ground Beef Tacos. Who doesn’t love a good taco (except maybe my grandkids who are in that ‘suspicious food’ state of toddlerhood). Crunchy or soft but always loaded with spicy meat, lettuce, cheese and fresh salsa.
You’ve probably made tacos using a packaged dry seasoning mix and if you’re happy with that, don’t rock the boat.
But I’m guessing since you’re reading this, you know in your heart of hearts there are better tasting tacos out there. Well, I’ve gone and done it. I turned one of my favorite appetizers, Chicken Salsa Verde Dip into an actual meal. I don’t mean an appetizer that I eat as a meal something I *may* or *may not* have done. Salsa Verde Enchiladas are rolled tortillas filled with deliciously seasoned pork Carnitas I made the other day in my slow cooker (don’t you just LOVE a 2 for 1 meal?!) slathered in an easy, creamy sour cream-salsa verde sauce then topped with as much cheese as I feel like because that’s just one of the perks of cooking at home, then baked until they’re all golden and gorgeous with gooey melted cheese and lightly crisp edges. No Carnitas? No problem. Pick up a rotisserie chicken from wherever you shop for a delicious option.
Hola! That’s pretty much the extent of my Spanish, even though Mexican food is one of my favorite things to eat pretty much any day of the week. I don’t need National Taco Day or Cinco De May to chow on 4 or 5 of these Taco Cupcakes. They’re really great all by themselves, but put out with a pitcher of margaritas and friends, you’re got yourselves a party.

Ultimate Chicken Nachos. What makes something ‘ultimate’ is subjective. Tyler Florence calls his best recipes ‘Ultimate’. I would agree. I checked, but couldn’t find any sort of TF Ultimate Chicken Nachos recipe. Maybe nachos just aren’t Tyler’s thing. Nachos are my thing, though. I could eat Mexican food a few times a week if I didn’t think hubby would abandon ship. When I’m in a restaurant with a group ~ and by group, two or more will do ~ and nachos are on the menu, I’m ordering one. They’re great to split. As I’m eating them, I secretly ~ or maybe not so secretly~ grade them based upon taste and the nacho’s components and whether it covered all the required bases. I’ve had this thing for nachos for a long, long time ~ going back to my single girl Taco Bell diet days. I started on beef nachos, then a few years ago I got hooked on Chicken Nachos and I haven’t looked back.

I love Mexican food and enchiladas, with their cheesy, saucy goodness packed with chicken and cheese and black beans are my all-time favorite.
