Air Fryer Potato Wedges – how to make crispy, fluffy potato wedges that cook in 15 minutes! Season simply with salt or load with ranch, cheese, bacon and sour cream for a pub-style appetizer.

A friend of mine sent me this recipe from Taste of Home for oven baked Potato Wedges. Thick cut potatoes seasoned with fresh herbs and served with a sour cream garlic-parm dipping sauce. This just the kind of friend we all need – potato lovers who share potato recipes, right?

Naturally, I wanted to try air frying them and try them I did: plain, sea salt, fresh herbs and Everything but the Bagel seasoned. My favorite is loaded with gooey sharp cheddar cheese, crispy bacon and sour cream.

Air Fryer Potato Wedges – a quick and easy side dish that goes with practically everything or fan favorite appetizer for the upcoming Super Bowl – an A-Game treat.

Above are similar to the Taste of Home version I mentioned, seasoned with fresh rosemary and sprinkled with grated parmesan cheese after they’re cooked. The sour cream dipping sauce is OMG fantastic.

What’s in air fryer potato wedges?

Here’s what you’ll need to make basic potato wedges – similar to Air Fryer French Fries but cut thicker in wedges.

  1. russet potatoes
  2. olive oil
  3. salt (coarse sea salt was used)

how to cut potatoes for potato wedges:

I leave the skins on my potatoes because I enjoy the taste and texture but you can peel them if you prefer.

Slice the potatoes in half lengthwise then place the cut side down and cut in half again giving you 4 quarters. 

Turn the potato over so the cut side is up then slice down the middle of each quarter creating more potato wedges. You will get at least 8 wedges – sometimes as many as 12 depending on the size of the potato.

Ever wondered whether you can make potato wedges in the air fryer? Yes! Air frying makes the BEST potato wedges and here’s why:

  • Incredibly delicious however you season them.
  • Perfectly cooked – crispy skin outside, fluffy potato inside.
  • Super easy to make.
  • Use very little oil.
  • Cook quickly!

Here’s how to make this Air Fryer Potato Wedges recipe:

Place the cut potato wedges in a bowl them cover with cold tap water and soak for 15 minutes to remove most of the starch and help them crisp.

Drain the water and dry the potatoes thoroughly. I use a combination of a clean kitchen towel and paper towels. Damp potatoes will steam instead of crisp.

Return the potatoes to a clean bowl and toss with olive oil and salt.

Preheat the air fryer for 3 minutes, 400° add the potato wedges and cook for 12-15 minutes pausing every 5 minutes to give the air fryer basket a good shake. Cooking time will vary depending upon the size of the wedges and your potato color preference.

Here’s what you’ll need to make loaded potato wedges. The ranch seasoning is optional but the magic in that little package adds great flavor.

  • olive oil
  • dry ranch seasoning
  • salt
  • cooking spray 
  • sour cream
  • bacon bits (packaged OR fresh cooked)
  • sharp cheddar cheese shredded

Slice the potatoes into wedges (see instructions above) then drizzle olive oil over the top and toss to coat. Sprinkle the dry ranch seasoning and salt over the wedges again tossing to coat them well.

Preheat the air fryer to 400° then lightly spritz the air fryer basket with cooking spray (spray is only needed with ranch seasoning).

Transfer the seasoned wedges to the preheated air fryer and cook 12-15 minutes or until they’re golden and crispy outside, tender inside. Pause the cooking time every 5 minutes and give the air fryer basket a good shake to help potatoes cook uniformly. 

Once the potatoes are finished cooking leave them in the air fryer and sprinkle on the shredded cheese and bacon bits then air fryer for another 15-30 seconds or until the cheese is melted. 

Remove from the air fryer onto a plate then drizzle or dollop the sour cream on top. Optional: sprinkle sliced green onions or parsley.

Ingredients

Basic Air Fryer Potato Wedges

  • 2 medium russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt coarse sea salt used

Loaded Air Fryer Potato Wedges

  • 2 medium russet potatoes
  • 1 tablespoon olive oil
  • 1 tablespoon dry ranch seasoning
  • 1/4 teaspoon salt
  • cooking spray not needed for basic AF Potato Wedges
  • 1/4 cup sharp cheddar cheese shredded - or more to taste
  • 3 tablespoons bacon bits packaged OR fresh cooked/crumbled or more to taste
  • 3 tablespoons sour cream or to taste
  • optional: sliced green onions or parsley

Instructions

Basic Potato Wedges:

  • Cut the potatoes into wedges (see body of post for how to cut wedges.

  • Toss with olive oil and salt to coat. Preheat the air fryer for 3 minutes (400 degrees) add the potato wedges and cook for 12-15 minutes pausing every 5 minutes to vigorously shake the AF basket. Cooking time will vary depending upon the size of the wedges and your potato color preference.

Loaded Potato Wedges:

  • Preheat the air fryer (400 degrees) then lightly spray the air fryer basket with cooking spray (needed with ranch seasoning).
  • Transfer the seasoned wedges to the air fryer and cook 12-15 minutes or until they’re golden pausing every 5 minutes and vigorously shake the AF basket.
  • Once the potatoes are finished cooking leave them in the air fryer and sprinkle on the shredded cheese and bacon bits then air fry for another 15-30 seconds or until the cheese is melted. 
  • Remove the potato wedges from the air fryer onto a plate then drizzle or dollop sour cream on top. Optional: sprinkle sliced green onions or parsley. Eat right away.

    Really tasty finger food for the big game. Just add your favorite beverage. Also good as a side with many main dishes. A real hit.
