Dinner | December 5, 2019 | By

Beef Stroganoff ~ tender cubes of beef simmered in a rich, savory sour cream-mushroom sauce with fresh herbs and a hint of Dijon mustard served over egg noodles.

Sometimes even really good recipes get lost in the shuffle. New readers have come on board – thank you! – and because there are hundreds of recipes on the site, some may get shuffled to the back.

I originally posted this recipe three years ago and decided to bring it back to the forefront for new follows as well as those who have been following for a while because it’s just that good.

Beef Stroganoff is one of my favorite winter recipes ~ comforting, old school classic and just what we need when temps drop as they’ve done here in the Midwest and even some parts of Florida. It’s not a quick weeknight meal, but a slow cook, Sunday Supper type and would even be great for entertaining over the holidays as well.

These old fashioned, naturally gluten free peanut butter cookies are lightly crisp on the bottom, chewy inside and loaded with peanut butter flavor.

Cheesy Sausage Wonton Cups ~ the BEST appetizer at the party! Bite size wonton cups filled with ground sausage and spicy cheese, baked until crisp. Watch the VIDEO and see how easy they are to make!

This post has been updated. The recipe remains the same.

A few years ago my niece brought one of the best appetizers I’ve ever eaten to a family gathering. I wasn’t the only one who ate more than their share (you know who you are). The whole tray disappeared in minutes.

Some appetizers are more geared toward women, while others are more to the guys‘ liking.  Cheesy Sausage Wonton Cups start with wonton wrappers formed into cups in a muffin tin, filled with sausage and spicy cheese, baked until crispy.

My niece went home with an empty tray and bragging rights for the best appetizer.

Homemade Peanut Butter Dog Treats

Homemade Peanut Butter Dog Treats ~ easy to make and your dog will love them! A healthy recipe with pure pumpkin, applesauce and bacon bits. They also makes great gifts!

Recipe adapted from Pet Guide.

What’s not to love about a dog? Excited, happy and an always-up-for-anything attitude? Plus who else greets you at the door as enthusiastically as your dog?

A few years ago we said goodbye to our 14 year old Golden Retriever Paddy and went dog-less. This meant we wore black clothes without looking like a fur ball and vacuumed way less often, but we missed having a furry friend around.

After several unsuccessful attempts to we found our furever friend Ruby aka Ruby Doo – or when she’s doing something she shouldn’t – Ruby Don’t!

She has a child-like excitement and while we don’t know exactly breed(s) she is, we agree that Ruby is funny, full of life and we’re glad to have her with us.

Chewy Oatmeal Raisin Cookies

Dessert | November 14, 2019 | By

Chewy Oatmeal Raisin Cookies ~ soft, chewy loaded with oats and raisins and just the right about of sweetness. Lightly crisp bottoms perfect for dunking. An easy, classic recipe.

It’s about 17 degrees outside today with 8″ of snow on the ground. Translation: stay inside and bake instead of running the errands on my list.

Days with temps in the teens are meant for indoor activities – especially baking! It warms the house, makes it smell better than any candle and as an added bonus, you’ll end up with a tasty snack.

Chewy Oatmeal Raisin Cookies for the win.

Homemade Cranberry Sauce

Dinner | November 12, 2019 | By

Homemade Cranberry Sauce ~ quick and easy to make. Loaded with fresh cranberries and citrus flavor. 1000 times better than the canned stuff.

The onset of Thanksgiving brings the ‘discussion’ of cranberry sauce in our house. My husband likes the stuff in the can that comes out jelly-like with the can’s indentations intact.

I prefer what you’re seeing here.  Homemade Cranberry Sauce made with fresh cranberries, infused with bright citrus flavor  and apples plus pistachios for a little texture.

Tangy-sweet it’s absolutely mouthwatering. The one in the can from my husband’s childhood and the stuff he pledges his allegiance to doesn’t begin to compare.

Crockpot Chicken Enchilada Soup

bowl of crockpot chicken enchilada soup top topped with fritos, sour cream and lime wedge

Dinner | November 9, 2019 | By

Crockpot Chicken Enchilada Soup ~ assembles easily in 5 minutes. Loaded with bold flavor, chunks of chicken and lots of creamy, melted cheese. Better than the restaurant version. Load it up with your favorite toppings!

We love enchiladas and order they pretty routinely in Mexican restaurants, though we’re a house divided on beef vs chicken. Since I’m doing the heavy lifting today, you can see who won. Full blown enchiladas are labor intensive. A good weekend dinner – yes but for quick weeknights, there are better options.

Creamy Crockpot Chicken Enchilada Soup has all the flavors of Chicken Enchiladas but you can have it prepped and ready for slow cooking in just 5 minutes. When it’s finished cooking, just shred the chicken and blend in the cheeses.

Spicy, creamy, cheesy and as easy to make as any restaurant version, but better. Way, way better.

City Chicken

Dinner | November 5, 2019 | By

City Chicken ~ cubes of pork skewered, breaded and baked until tender. Serve with mashed potatoes and gravy. This recipe is old fashioned, Midwest comfort at its finest.

We met my brother-in-law and sister-in-law a few weeks ago for dinner at a local Polish restaurant. My brother-in-law ordered City Chicken and gave us each a taste. It was really good: mouth-watering, food envy good.

It dawned on me I hadn’t made it in a long time and with cooler temps here and the holidays coming, it’s the ideal recipe to share with family.
