Baileys Brownies

Baileys Brownies ~ turn a boxed brownie mix into a triple layer decadent dessert! Fudgy, chewy, moist brownies topped with Baileys laced buttercream frosting and finished with ganache glaze.

There’s no shame in the box mix game. Boozy Brownies, laced with Jack Daniels start with a box mix and happen to be one of my most popular recipes! I even added Guiness to this Irish Stew – what else? 

Well, I’m doing it again just in time for St. Patrick’s Day because why should all booze be consumed by the glass?

The box mix gives you a leg up and lets you enjoy these fudgy brownies even faster.  While the brownies are baking, whip up the buttery Baileys frosting and chocolate ganache that also has a hint of Baileys. 

Chewy, fudgy triple layered Baileys Brownies – deliciously rich and chocolatey with a boozy Baileys flavor.

Can kids eat Baileys Brownies?

Baileys Irish Cream is an Irish liqueur – an alcoholic beverage blend of cream, cocoa, and Irish whiskey, so it’s definitely not for the kiddos. But the flavor it adds to basic brownies is incredible and adults will love it.

What’s in Baileys Brownies?

  • boxed 8 x 8 Brownie mix (+ ingredients per box instructions)
  • confectioners sugar
  • butter
  • Baileys 
  • vanilla
  • salt
  • dark chocolate chunks
  • heavy cream 

How to make these brownies:

These brownies start with a box mix designed for an 8 x 8 baking dish. If you’d prefer making the brownie layer from scratch, try this easy Homemade Brownie recipe from Mamagourmand. 

Make the brownies according to the package directions then cool completely. 

Baileys frosting:

Add softened butter to a bowl then add the sugar beating until the sugar is incorporated. Fold in the Baileys, vanilla and salt then blend on low until combined.

Ganache:

In a small sauce pan combine the chocolate chunks, Baileys, heavy cream and butter over low heat stirring until smooth. 

Pour the ganache over the frosted brownies, let the ganache cool to room temp then transfer the brownies to the refrigerator.

Store the brownies in the refrigerator in a sealed container up to one week.

Ingredients

  • 1 box brownie mix 8 x 8 size + ingredients on package

Baileys Buttercream Frosting

  • 2 cups confectioners sugar
  • 1/2 cup butter
  • 2 tablespoons Baileys Irish Cream
  • 1 teaspoon vanilla
  • pinch of salt

Baileys Ganache

  • 1 cup dark chocolate chunks
  • 3 tablespoons Baileys
  • 1/4 cup heavy cream
  • 1 tablespoon butter

Instructions

  • Make the brownies according to the package directions then cool completely.

Frosting

Ganache

  • In a small sauce pan combine the chocolate chunks, Baileys, heavy cream and butter over low heat stirring until smooth. 
    Pour the ganache over the frosted brownies, let the ganache cool to room temp then transfer the brownies to the refrigerator. Serve chilled or room temp.
