Friends, it’s that time of the year again so I’m busting out my 40 favorite game day recipes in no particular order.
Pick a couple of these easy appetizers or dips, grab a few bags of tortilla chips and you’re ready to host the ultimate Super Bowl party!

WHAT’S IN CROCKPOT SALSA VERDE CHICKEN ENCHILADA DIP?
- boneless skinless chicken breasts
- salt and pepper
- dry ranch seasoning
- cumin
- can of red enchilada sauce
- salsa verde
- corn (canned or frozen)
- shredded sharp cheddar cheese
- shredded pepper jack cheese
- cream cheese
- fresh cilantro
- tortilla chips for serving
optional: avocado sliced for garnish
HOW TO MAKE CROCKPOT SALSA VERDE CHCKEN ENCHILADA DIP:
Add chicken breasts to slow cooker. Season with salt and pepper.
Top with enchilada sauce and salsa verde. Sprinkle on dry ranch seasoning and cumin then give it a light stir.
Add the corn then cover and cook on HIGH 3-4 hours or until the chicken is fork tender and shreds easily (but not mushy).
Using a couple of forks, shred the chicken then add the cheddar, pepper jack and cream cheeses.
Once blended, stir in the cilantro, put your favorite tortilla chips and serve this total crowd pleaser.
Add a spoon and go right from the crockpot or transfer to a casserole dish and garnish with cilantro and avocado slices.

Ingredients
- 2 large boneless skinless chicken breasts about 1 pound
- salt and pepper to taste
- 1 tablespoon dry ranch seasoning
- 1 teaspoon dry cumin
- 10 ounce can red enchilada sauce
- 1/2 cup salsa verde (jar)
- 1/2 cup corn can or frozen
- 1 cup sharp cheddar cheese shredded
- 1/2 cup pepper jack cheese shredded
- 4 ounces cream cheese softened to room temp
- 2 tablespoons cilantro diced
- your favorite tortilla chips for serving
Instructions
- Add chicken breasts to slow cooker. Season with salt and pepper.
- Top with enchilada sauce and salsa verde. Sprinkle on dry ranch seasoning and cumin then stir.
