Buffalo Chicken Quesadillas

Buffalo Chicken Quesadillas – flour tortillas rolled into cones and stuffed with bites of buffalo chicken and cheese then air fried or baked until crisp. These easy, hand-held quesadillas make the ideal dinner or fun, party appetizer!

You’ve probably already guessed I’m *slightly* obsessed with spicy buffalo flavor but these Buffalo Chicken Quesadillas may be my new favorite.

They’re not your classic quesadilla. Flour tortillas are rolled into cone and stuffed with spicy Buffalo chicken, buffalo sauce and plenty of cheese. Air fry or bake until warm and crisp – they’re 100% addictive and because they’re handheld, they make the perfect party appetizer!

I like recipes that call for simple ingredients that I may already have on hand. Such was the case with these Buffalo Chicken Quesadillas. Plus they’re super simple to make. The tortillas are rolled into cones (remember doing that with construction paper when you were a kid?) then packed with a chicken-buffalo-cheese blend. The cheese ‘glues’ the tortilla together and they cook in under 10 minutes!

If you have leftover chicken or a rotisserie by all means use it instead of cooking your own. These quesadillas make a quick and easy weeknight dinner and if you’re in need of a show-stopping appetizer give them a try. You can even prep the filling ahead of time and bake when company arrives.

What’s in buffalo chicken quesdillas?

  • vegetable oil
  • boneless chicken breasts
  • salt and pepper
  • garlic powder
  • cream cheese
  • buffalo sauce (Frank’s brand used)
  • shredded Mexican blend cheese (can use sharp cheddar)
  • celery
  • 6″ flour tortillas 6″ (called fajita size – cut in half)
  • small bowl of water to seal the tortillas

How to make buffalo chicken quesadillas:

This recipe makes 6-8 quesadillas. Need more? Just double the ingredients!

Add 1 1/2 teaspoons of vegetable oil to a large skillet then finely dice the chicken and add it to the skillet. Season with garlic powder, salt and pepper and cook until no longer pink (5-7 minutes) then transfer to a medium size bowl.

Add the softened cream cheese, buffalo sauce, shredded cheese and finely chopped celery then blend well. 

Next cut the tortillas in half then roll each half into a cone shape. Add about 2 heaping teaspoons of chicken blend to the cone leaving about 1/4″ open at the top. Using your finger, dab water on the inside of the cone then firmly press to seal it.

Continue until all of the chicken is gone then using the remaining teaspoon of vegetable oil lightly brush both sides of the quesadilla with oil. 

to air fry:

Preheat the air fryer to 390° then place the quesadillas in the fryer (you may have to work in batches). Air fry 4 minutes then turn them over and bake another 3 minutes or until they’re golden.

to bake:

Preheat the oven to 400° then line a baking sheet with parchment paper or aluminum foil for easier cleanup. Place the quesadillas onto the baking sheet, brush with oil then bake 8-10 minutes or until golden, turning halfway through the cooking time.

These hand-held quesadillas are best served with ranch or blue cheese dressing (or both!) for dipping and even some crumbled blue cheese on top.

Ingredients

  • 2 1/2 teaspoons vegetable oil divided
  • 1/2 pound boneless chicken breasts
  • salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 3 ounces cream cheese softened to room temp
  • 3 tablespoons Buffalo sauce Frank's brand used
  • 3/4 cup Mexican blend cheese shredded (can use sharp cheddar)
  • 2 tablespoons celery finely chopped
  • 3-4 6" flour tortillas called fajita size
  • small bowl of water to seal quesadillas

Instructions

Buffalo Chicken-Cheese Filling

  • Add 1 1/2 teaspoons of vegetable oil to a large skillet then finely dice the chicken and add to the skillet. Season with garlic powder, salt and pepper and cook until no longer pink (5-7 minutes) then transfer to a medium size bowl.
  • Add the softened cream cheese, buffalo sauce, shredded cheese and finely chopped celery to the bowl then blend well. 

Making the Quesadillas

  • Cut the tortillas in half then roll each half into a cone shape. Add about 2 heaping teaspoons of chicken blend to the cone leaving about 1/4″ open at the top. Using your finger, dab water on the inside of the cone then firmly press to seal it.
  • Continue until all of the chicken is gone then using the remaining teaspoon of vegetable oil lightly brush both sides of the quesadillas with oil. 

To Air Fry:

  • Preheat the air fryer to 390° then place the quesadillas in the fryer working in batches if necessary. Air fry for 4 minutes then turn and air fry another 3 minutes or until they’re golden.

To Bake:

  • Preheat the oven to 400° then line a baking sheet with parchment paper or aluminum foil for easier cleanup. Place the quesadillas onto the baking sheet, brush with oil then bake 8-10 minutes or until golden, turning halfway through.
  • Serve with ranch or blue cheese dressing for dunking.
