Mini Christmas tree pizza is my take on that recipe using either hummus or the classic cream cheese topping.

WHAT IS CHRISTMAS TREE PIZZA?

Christmas Tree Pizza with hummus

First off, this not cold leftover pizza we’ve eaten straight from the fridge.

Christmas pizza is intended to be eaten cold and is a delicious, healthier appetizer with just a few simple ingredients from the grocery store.

Of course, these tasty mini pizzas don’t have to be a Christmas tree shape. Feel free to use different shapes for any holiday season.

WHAT’S IN CHRISTMAS TREE PIZZA?

The best thing about this recipe is you can customize it with any of your favorite toppings.

  • refrigerated crescent dough sheet
  • fresh vegetables, finely chopped (broccoli, shredded carrots and multi colored bell peppers used)
  • hummus (your favorite store brand or homemade hummus)
  • all purpose flour
  • parchment paper
  • Christmas tree shape cookie cutter

HOW TO MAKE CHRISTMAS TREE PIZZA:

Pre heat the oven to 375 degrees then line a baking tray with parchment paper.

Sprinkle flour on a smooth surface then unroll the dough. Using a rolling pin, press gently until the piece of dough is uncurled and an even shape.

With a Christmas tree cookie cutter, cut trees from the dough to form your pizza crust, rerolling the dough to get as many trees as possible (number will vary with the size of the cookie cutter).

Carefully transfer the trees to the prepared baking sheet and bake 10-12 minutes or until lightly golden brown (bake time may vary with ovens and exact thickness of trees).

Transfer the trees to a wire rack and cool completely before adding any toppings.

While the trees are cooling, finely chop the vegetables then toss together for a confetti look.

Spread 1 heaping teaspoon of the hummus mixture on each tree then add a sprinkle of vegetables.

Loosely tent with aluminum foil then refrigerate at least 15 minutes before serving.

RECIPE VARIATION – CREAM CHEESE TOPPING:

If you prefer a cream cheese veggie pizza topping blend the following in a mixing bowl:

  • 4 ounces cream cheese (low fat cream cheese can be used)
  • 1/4 cup sour cream
  • 1/2 teaspoon dry dill weed
  • 1/2 tablespoon dry ranch seasoning or to taste

Spread over the top of cooled crescent dough Christmas trees then top with finely chopped vegetables.

TIPS FOR THE BEST VEGGIE PIZZA:

  • Line the baking sheet with parchment paper to keep the trees from sticking and make cleanup a snap.
  • Finely chop the vegetables and use shredded carrots so there aren’t any vegetable chunks.
  • Chill the trees before serving to let all the flavors come together.

VARIATIONS AND SUBSTITUTIONS:

  • Use herb cream cheese instead of ranch seasoning.
  • Substitute plain Greek yogurt for sour cream.
  • Add crumbled feta to the cream cheese mixture.
  • Try green pepper or other vegetables.
  • Use pesto sauce instead of cream cheese or hummus.

WHAT TO DO WITH LEFTOVERS:

Leftover Christmas Tree Pizza can be stored in the refrigerator in an airtight container up to 3 days.
