WHAT DO I NEED TO MAKE GOAT CHEESE BLACKBERRY CROSTINI?

Goat Cheese Mixture and Toppings:

  • goat cheese log
  • cream cheese
  • olive oil
  • kosher salt or sea salt
  • blackberry jam

Crostini:

  • french baguette sliced
  • olive oil

Garnishes:

  • fresh mint
  • optional: aged balsamic reduction or balsamic glaze drizzled on top

HOW TO MAKE GOAT CHEESE BLACKBERRY CROSTINI:

To the bowl of a food processor, add goat cheese, cream cheese and a pinch of salt.

Pulse a few times to break up the goat cheese then drizzle in the olive oil and blend until smooth pausing to scrape the sides.

Transfer the goat cheese mixture to a small bowl.

Preheat the oven to 375 degrees.

Slice baguette into about 1/2 inch slices then transfer to a baking sheet in a single layer.

Lightly brush each baguette slice with olive oil then bake 4-5 minutes or until golden and lightly toasted.

Remove toasted bread from the oven.

Cool to room temp the top with a spoonful of the whipped goat cheese mixture.

Add about a heaping 1/2 teaspoon of jam to the top of the goat cheese, then press a blackberry into the jam.

Top with fresh mint leaves then serve the goat cheese toasts right away.

Optional: add a light drizzle of balsamic vinegar (a little goes a long way!) over the top.

SUBSTITUTIONS AND VARIATIONS:

several goat cheese blackberry crostini on a wooden platter garnished with fresh mint leaves
  • Drizzle a little honey over the top instead of balsamic vinegar.
  • Substitute feta cheese instead of goat cheese.
  • Try other fresh berries and fresh fruits like blueberries, raspberries, strawberries or figs.
  • Use fresh thyme,  fresh basil or a sprig of fresh rosemary instead of mint.
  • Add the zest from half of one lemon for a light citrusy flavor.
  • A high speed blender can be used if you don’t have a food processor.

HOW TO STORE LEFTOVERS:

This appetizer is best eaten when it’s freshly made but if you have leftovers, store them in an airtight container in the fridge for a couple of days.

The bread won’t be as crisp but they’ll still be good.

Enjoy!
