SUBSTITUTIONS AND VARIATIONS:
- Drizzle a little honey over the top instead of balsamic vinegar.
- Substitute feta cheese instead of goat cheese.
- Try other fresh berries and fresh fruits like blueberries, raspberries, strawberries or figs.
- Use fresh thyme, fresh basil or a sprig of fresh rosemary instead of mint.
- Add the zest from half of one lemon for a light citrusy flavor.
- A high speed blender can be used if you don’t have a food processor.
HOW TO STORE LEFTOVERS:
This appetizer is best eaten when it’s freshly made but if you have leftovers, store them in an airtight container in the fridge for a couple of days.
The bread won’t be as crisp but they’ll still be good.
