Hamburger Helper Beef Stroganoff made completely in ONE POT with ground beef, tender egg noodles and fresh mushrooms in a rich creamy sour cream sauce.
I’d call this a copycat recipe of the original that came in a box stuff, but the fact is – it’s way better than the original! Quick and easy to make in under 30 minutes all in one pot. This budget friendly recipe is absolutely delicious with deep, rich flavor you won’t expect.
It’s a one pot wonder . . .
I used to make that meal in a box in a pinch – the one with the giant white 4-finger glove on the front. Ever wonder what happened to the fifth digit? It got dinner on the table fast but the powder “flavor pack” never quite hit the mark resulting in a less than enthusiastic crowd.
Enter: this Hamburger Helper Beef Stroganoff that cooks all in one pan (even the noodles!) plus a secret ingredient you won’t be expecting: French Onion chip dip. Hold on – stay with me here. You won’t regret it.
What’s in Hamburger Helper Beef Stroganoff?
- butter
- fresh mushrooms
- Worcestershire sauce
- ground beef
- beef stock
- can cream of mushroom soup
- Dijon mustard
- wide egg noodles
- 1/2 tub of French Onion Chip Dip
How to make Hamburger Helper Beef Stroganoff:
NOTE: The beef, sauce and noodles all cook in one pot so be sure to use a deep skillet or larger pot so you’ll have enough room for the ingredients.
Add the butter to a large deep skillet or pot over medium heat. Drop in the sliced mushrooms and cook stirring occasionally until browned (3-4 minutes) then lightly season with salt and pepper, add the Worcestershire sauce and give it a good stir.
Crumble in the ground beef, season with salt and pepper then cook until no longer pink continuing to break up any large clumps. Drain any excess grease.
Stir in the beef stock, cream of mushroom soup and Dijon to form the sauce then once it’s combined add the (uncooked) noodles. Cover and bring to a boil then reduce the heat and simmer 9-14 minutes or until the noodles are tender.
Don’t worry if the stroganoff seems too thick. Once you add the chip dip, you’ll have a smooth, creamy sauce.
The cook time will vary depending upon the egg noodles you use. Check the package for timing and be sure your noodles are fully cooked before moving on.
Blend HALF of the container of chip dip into the sauce over low heat along with the parsley. Taste and adjust for salt and pepper then enjoy right away.

can i double this recipe?
You can absolutely double this recipe. I wrote this recipe for our smaller family (3 generous servings), but if you’re feeding a larger group or just want more deliciousness multiply each ingredient by two and use the whole tub of chip dip.
NOTE: to double the recipe use a deeper pot, similar to what you’d make soup in to give the ingredients room to cook.
