Hamburger Helper Beef Stroganoff – ground beef, tender egg noodles and fresh mushrooms in a rich creamy sour cream sauce for a simple one-pot 30 minute meal – perfect for busy weeknights.

This easy recipe for my homemade version Hamburger Helper Beef Stroganoff. It’s way better than the stuff in the box and just as fast to whip up.

Here’s all you’ll need for this copycat hamburger helper beef stroganoff recipe.
- butter
- fresh mushrooms (baby bella used)
- Worcestershire sauce
- lean ground beef
- beef stock or beef broth
- can of cream of mushroom soup
- Dijon mustard
- wide egg noodles
- 1/2 tub of French Onion Chip Dip
- fresh parsley
How to make Hamburger Helper Beef Stroganoff:
TIP: Use a large deep skillet or pot so the noodles have room to cook in the sauce.
Add the butter to a large skillet or pot over medium heat. Drop in sliced mushrooms and cook stirring occasionally until browned (3-4 minutes) then lightly season with salt and pepper, add Worcestershire sauce and stir.
Crumble in ground beef, season lightly with salt and pepper. Cook until no longer pink, breakig up any large clumps. Once the meat is browned, drain excess grease.
Stir in beef stock, cream of mushroom soup and Dijon and once it’s well combined add the uncooked egg noodles. Cover and bring to a boil then reduce heat and simmer 9-14 minutes or until the noodles are tender, stir often so the noodles don’t stick to the bottom of the skillet..
TIP: check your package of noodles for approximate cook time.
Don’t be concerned if the stroganoff seems too thick. Once you add the chip dip, you’ll have a smooth, creamy sauce.
Be sure to cook pasta completely before moving to the next step.
Blend half of the container of chip dip into the sauce over low heat along with the parsley. Taste and adjust for salt and pepper then eat right away.
How to store and reheat:
Cool completely then transfer to an airtight container. Store in the fridge up to 3 days. Reheat for a quick lunch the next day in the micro or freeze up to 3 months.
Subs and variations:
Vegetables: add frozen peas, shredded zucchini or fresh spinach.
Sour cream: instead of chip dip
Noodles: any short pasta will work in this recipe like penne or rigatoni.

Hamburger Helper Beef Stroganoff
Ingredients
- 2 tablespoons butter
- 4 ounces fresh mushrooms sliced
- 1 tablespoon Worcestershire sauce
- 1/2 pound ground beef
- 1 1/2 cups beef stock
- 1 can cream of mushroom soup
- 1/2 teaspoon Dijon mustard
- 6 ounces wide egg noodles
- 12 ounce French Onion chip dip only use HALF of the container
- 3 tablespoons fresh parsley chopped
Instructions
- NOTE: The beef, sauce and noodles all cook in one pot so be sure to use a deep skillet or larger pot so you’ll have enough room for the ingredients.
- Add the butter to a large deep skillet or pot over medium heat. Drop in the sliced mushrooms and cook stirring occasionally until browned (3-4 minutes) then lightly season with salt and pepper, add the Worcestershire sauce and give it a good stir.
- Crumble in the ground beef, season with salt and pepper then cook until no longer pink continuing to break up any large clumps. Drain any excess amounts of grease.
- Stir in the beef stock, cream of mushroom soup and Dijon to form the sauce then once it’s combined add the noodles. Cover and bring to a boil then reduce the heat and simmer 9-14 minutes or until the noodles are tender. Stir often so the noodles don't stick to the bottom of the skillet.
- Check the noodle package for timing and be sure your noodles are fully cooked before moving on.Fold HALF of the container of chip dip into the sauce. stir to coat over low heat, then sprinkle in the parsley. Taste and adjust for salt and pepper then enjoy right away.
