I may be partial to fruity desserts. They’re a perfect way to enjoy the last of the fresh summer fruit.
1. Peach Galette:

Layers of ice cream sandwiches, Cool Whip, chocolate fudge topping, caramel topping and all the fun, festive decorations you like.
This is the time of year for super simple desserts! One of the best things about this dessert is how incredibly easy it is making it an ideal kid recipe and perfect for summer parties, backyard barbecue or pool party.
Here’s what you’ll need:
- Ice cream sandwiches
- Cool Whip topping
- Fudge/chocolate topping
- Caramel topping
- Sprinkles and/or decorations of your choice (candy, nuts, etc – see below for more ideas)
HOW TO MAKE AN ICE CREAM SANDWICH CAKE:
- Choose a pan size to fit your crowd. A 9×13 will need 24 ice cream sandwiches and two containers of Cool Whip. 9×9 pan will need 10-12 sandwiches and one container of Cool Whip.
- Once you have your pan, lay the sandwiches flat to form the first layer (you’ll have to cut the last sandwich to fit).
- Top with half of the Cool Whip then add another layer of ice cream sandwiches and the rest of the Cool Whip.
- Drizzle chocolate and caramel toppings followed your favorite toppings.
- Cover and freeze 1 hour or until set then slice and serve.

Ingredients
- 10-24 ice cream sandwiches depending on size of pan used
- 8-16 ounces Cool Whip depending on size of pan used.
- 1 jar fudge/chocolate ice cream topping.
- 1 jar caramel ice cream topping
- sprinkles, nuts, candy, etc. for topping see body of post for more ideas
Instructions
