Mistletoe Mistletoe Mimosas – easy, festive 2-ingredient holiday cocktail ideal for Christmas brunch through dinner, parties and ringing in the New Year!

Entertaining during the holiday season is a great time for mimosas — and these couldn’t be any more festive!

No recipe is really needed — all you need is a bottle or two of prosecco, cranberry juice and some fresh pomegranate seeds for garnish if you feel like getting fancy.

… and speaking of fancy – how about some party-ready ice cubes studded with pomegranate seeds and a sprig of fresh rosemary for a pop of color and an infusion of flavor.

A Mistletoe Mimosa is ideal for Christmas morning all the way through dinner and festive enough for ringing in the New Year!

It’s a twist on the classic mimosa and must-make for all your holiday parties!

WHAT IS A MIMOSA?

A classic mimosa is made with champagne and orange juice.

Mistletoe Mimosa is a festive twist on the traditional recipe.

It’s made with prosecco and cranberry juice with a light infusion rosemary and is irresistibly delicious.

WHAT’S BETTER – CHAMPAGNE OR PROSECCO?

The choice is yours. The best champagne or prosecco to use is whatever you prefer.

Personally, I’m a prosecco gal but there are no wrong choices here.

Prosecco is a little sweeter than champagne and is usually a little less expensive.

WHAT’S IN MISTLETOE MIMOSAS;

You really only need a little cranberry juice and some bubbly prosecco to make this holiday Mimosa.

To add a more festive touch, give these fun garnishes a try!

FESTIVE ICE CUBES:

  • 1 cup pomegranate seeds
  • 6 small rosemary sprigs
  • 100% cranberry juice (included above)
  • silicone ice cube tray (be sure the size of your ice cubes will fit into the glass size you choose).

SUGAR RIMMED GLASSES:

  • 1/4 cup granulated sugar
  • liquid for rim of glass (water, cranberry juice, citrus liqueur)

HOW TO MAKE FESTIVE ICE CUBES:

Prep and freeze the ice cubes ahead of time so they’re ready when you are!

Sprinkle 5-6 pomegranate seeds into each mold (the number will depend upon the size of your molds).

Insert a small sprig of rosemary into each and transfer to the freezer for several hours up to overnight.

HOW TO RIM THE GLASSES:

Add about 3 tablespoons of liquid to a small shallow bowl (water, cranberry juice, citrus liqueur such as Cointreau or Triple Sec that’s large enough for the rim of the glass.

Add the granulated sugar to another small shallow bowl or plate.

Working one at a time, dip the rim of the glass into the liquid then gently roll the rim in the sugar.

Repeat until all the glasses are rimmed. Note: this step can be done ahead. Reserve glasses in the refrigerator.

HOW TO MAKE MISTLETOE MIMOSAS:

Pour cranberry juicy into each glass about 1/4 of the way up being careful not to disturb the sugar rim. (adjust according to how strong you prefer your cocktail).

Note: the ratio of prosecco to cranberry juice is up to you and how strong you prefer your cocktail.

Top with prosecco leaving space at the top if you’re adding the festive ice cubes.

Add one ice cube per glass the enjoy right away.

SUBS AND VARIATIONS:

  • Instead of cranberry juice, try fruit juices such as orange juice, pineapple juice, grapefuit juice or even a clear soda (all great options!)
  • Use fresh cranberries instead of pomegranate seeds in the festive ice cubes.
  • Add a splash of an orange liqueur such as Cointreau for a little citrus flavor.
  • For White Christmas Mimosas use white cranberry juice. You could even add some sugared cranberries

  • 6 slot silicone ice cube tray for festive ice cubes
  • 6 Champagne flutes, wine glasses or cocktail glasses

Ingredients
  

  • 1 750 ml prosecco can use champagne
  • 2 cups 100% cranberry juice more or less depending on strength of cocktail

Festive Ice Cubes

  • 1 cup pomegranate seeds
  • 6 small rosemary sprigs
  • cranberry juice included above

Sugar Rim

  • 1/4 cup granulated sugar
  • liquid for rim of glass water, cranberry juice or citrus liqueur can be used

  • Ice cubes can be made 1-3 days ahead so they're ready when you are. Add cranberry juice to each ice cube mold leaving a little space at the top of each.

Assembling the Mistletoe Mimosas

  • Carefully pour cranberry juicy into each glass about 1/4 of the way up (adjust according to how strong you prefer your cocktail).
  • Top with prosecco leaving space at the top then add one festive ice cube to each glass and enjoy right away.
