How many summer days do you crave a delicious dessert but don’t want to heat up the house? For me – it’s pretty much every day.
Grilled Skillet Berry Crisp is the ideal summer treat showcasing the jewels of summer. Strawberries, blueberries, raspberries or blackberries with a crumbly, buttery brown sugar-oat topping.
It’s the dessert of the season and you’ll find everything you need to make it below.
Why make crisp instead of pie?
Easier than pie! – and faster. The base of this Berry Crisp is pure summer fruit – no crust – with a delicious oat streusel topping. I love a good pie, but friends – it’s summer – let’s relax!
Simple grocery store ingredients – fruit, corn starch, sugar, oats, flour, butter, lemon juice, vanilla and salt.
Two cooking options! Grill or bake in the oven with equally delicious results.
Outrageously good – the best fruit summer has to offer topped with buttery brown sugar oat streusel.
DO I NEED A CAST IRON SKILLET?
To grill this berry crisp, use an 11-12″ cast iron skillet that can take grilling heat.
You can also oven bake this crisp in the skillet or use an 8 x 8 baking dish.
Either way, the rest of the recipe is the same.
tips for grilling skillet berry crisp:
Use a cast iron skillet so the berries don’t burn.
Cover the skillet with foil when you start grilling to trap the heat and ‘bake’ the crisp. You’ll remove the foil later to brown and crisp the top.
Grill over medium heat – about 350° – lower heat also the berries don’t burn.
can i use frozen berries?
Use any assortment of fresh or frozen summer berries – strawberries, blueberries, raspberries, blackberries – or even cherries – as long as you end up with 5 to 5 1/2 cups of berries.
If you’re using frozen berries, defrost the berries, drain any liquid and gently pat dry with a paper towel then follow the rest of the recipe.
What’s in skillet Berry Crisp?
Skillet or baking dish:
- cast iron skillet OR baking dish
- butter for ‘greasing’
The berries:
- fresh mixed summer berries – strawberries, blueberries, raspberries OR blackberries.
- granulated sugar
- lemon juice
- cornstarch
The Brown Sugar-Oat Topping:
- melted butter
- all purpose flour
- old fashioned oats (not quick cooking)
- cinnamon
- light brown sugar
- pinch of salt
grilled bERRY CRISP:
Preheat the grill to medium heat (about 350°) then butter the skillet and set it aside.
Add the berries to a medium size bowl, slicing strawberries so the fruit is about the same size.
Sprinkle on the sugar, lemon juice and corn starch over the berries and gently combine then transfer the fruit to the prepared skillet.
Melt the butter in a medium size microwave safe bowl then add the flour, oats, sugar, butter, cinnamon and a pinch of salt. The mixture should be crumbly when you’re finished.
Using your hands, sprinkle the topping over the berries. I like to leave the very edges without topping so I can see the fruit bubbling as it grills.
Cover the skillet with aluminum foil then grill 15 minutes over medium heat.
Remove the foil from the skillet and continue grilling 7-10 more minutes or until you can see the berry juice bubbling on the edges and the topping is lightly browned.
Remove from the grill and cool 10 minutes. Serve plain or with ice cream.

- 4 tablespoons butter melted
- 1/2 cup all purpose flour
- 3/4 cup old fashioned oats (not quick cooking)
- 1 teaspoon cinnamon
- 1/2 cup light brown sugar packed
Instructions
GRILLING INSTRUCTIONS:
- Preheat the grill to medium heat (about 350°) then butter the skillet and set it aside.
- Slice strawberries then add all berries to a medium size bowl.
- Sprinkle the sugar, lemon juice and corn starch over the berries and gently combine then transfer the fruit to the prepared skillet.
