Snickers Cheesecake Bites

Snickers Cheesecake Bites ~ sweet and salty cheesecake bites with Snickers candy and a pretzel crust topped with chocolate ganache and gooey caramel.

I’m always looking for a little something sweet after a meal. These Snickers Cheesecake Bites are one of the best desserts around. I may have eaten one. . .or three today alone.

I used to make a full-size Snickers Cheesecake years ago that was a total show stopper but the days of full size anything in our house went by the wayside when we became empty-nesters.

It’s much easier to share extras of single-serve or bite size so I repurposed that cheesecake into these Snickers Cheesecake Bites.  Every bite as delicious, but just because they’re mini doesn’t mean you have to stop at one.

Snickers and Cheesecake may just be one of the best pairings out there and when you combine that with a salty pretzel crust it takes this easy dessert to the next level.

What’s in Snicker’s Cheesecake Bites?

  • full size Snickers candy bars
  • pretzels
  • brown sugar
  • butter
  • cream cheese
  • vanilla
  • granulated sugar
  • peanut butter
  • egg
  • semi sweet chocolate chips
  • milk
  • caramel ice cream topping (jar)
  • 12 cup muffin tin
  • 12 paper liners

How to make Snickers Cheesecake Bites:

Line the muffin tin with paper liners then preheat the oven to 325°.

Crust:

Using either a food processor or zip-top bag, crush the pretzels into crumbs then add them to a medium size bowl. Pour in the melted butter and brown sugar then blend everything together.

Divide the pretzel mixture between the cups then using the back of a measuring spoon gently press into the bottom of the liner.

Cheesecake filling:

Tip: Bring the cream cheese to room temp before you start making the filling.

Using a hand-held mixer blend the cream cheese, vanilla, granulated sugar  and peanut butter together.

Once it’s combined, fold in the eggs then stir about 2 1/2 of the coarsely chopped Snickers bars into the mix by hand reserving the remaining half candy bar for garnish.

Divide the cheesecake mixture between the cups (they should be almost full) and bake at 325 15-18 minutes. There may be a slight jiggle to them but they’ll continue to cook as they cool.

The chocolate ganache:

Pour the chocolate chips and milk into a microwave safe bowl and heat on high 30 seconds. Give it a good stir and if the chips aren’t melted microwave a few more seconds until the ganache is smooth. You’ll want it to be a consistency that will let you drizzle it easily. If needed, add more milk one teaspoon at a time.

The finishing touches:

Once the Snickers Cheesecake Bites are completely cool, drizzle a little ganache (or more if you like!) over the top, then a drizzle of caramel sauce. Garnish with the remaining candy pieces then refrigerate at least a couple of hours up to overnight.

Ingredients

  • 1 egg
  • 1/3 cup semi sweet chocolate chips
  • 3-4 tablespoons milk
  • 3 tablespoons caramel ice cream topping jar
  • 12 cup muffin tin
  • 12 paper liners

Instructions

  • Line the muffin tin with paper liners then preheat the oven to 325°.
  • Using either a food processor or zip-top bag, crush the pretzels into crumbs then add them to a medium size bowl. Pour in the melted butter and sugar and blend thoroughly.
  • Divide the pretzel mixture between the cups then using the back of a measuring spoon gently press onto the bottom of the liner. 
  • Using a hand-held mixer blend the cream cheese, vanilla, granulated sugar  and peanut butter together then fold in the eggs.
  • Stir about 2 1/2 of the coarsely chopped Snickers bars into the mix by hand. Set aside the remaining candy for garnish.
  • Divide the mixture between the cups (they should be almost full) and bake at 350 15-18 minutes. There may be a slight jiggle to them but they’ll continue to cook as they cool.  
  • To make the GANACHE, pour the chocolate chips and milk into a microwave safe bowl and heat on high 30 seconds. Stir and if the chips aren’t all melted microwave a few more seconds until the ganache is  smooth and a consistency that will let you drizzle it easily. If necessary add more milk a teaspoon at a time.
  • Once the cheesecakes are completely cool, drizzle the ganache over the top followed by a drizzle of caramel sauce then top with the remaining candy pieces. Refrigerate at least a couple of hours up to overnight.

      Hahaha you’re not kidding Mary! We had a family BBQ over the weekend and I made these Snickers Cheesecake bites — along with a lot of other favorite foods I can’t trust myself to keep in the house! So the gym was a MUST this morning along with getting back into the swing of eating a little healthier — all about balance, right? Enjoy the day, friend!

    Are these the small muffin tins and papers? From the looks of pics they look like the regular sized muffin tins.

      Hi Elaine – they’re made in full size muffin tins (12 count muffin tray). You can make them in a mini muffin tin – just adjust the baking time accordingly. 🙂
