Strawberry Bread recipe ~ moist, lightly sweet bread loaded with fresh strawberries and topped with a simple cream cheese glaze.
This Strawberry Bread is a simple to make quick bread, meaning no yeast or kneading and it takes full advantage of the abundant crop of Florida strawberries coming north this time of year.
Keep the recipe on hand in early June too when bright red, sun-sweetened homegrown berries can’t be beat. Because the bread isn’t overly sweet, a thick slice is delicious with morning coffee and equally good for dessert in the evening. Bonus: it whips up in less than 10 minutes.
Fresh berry bread is underrated in my book. I make it all year including banana bread and when blueberries are in season and the garden is overflowing with zucchini, I switch to this recipe.
Strawberry Bread Ingredients:
- granulated sugar
- brown sugar
- milk
- vegetable oil
- egg
- plain Greek yogurt
- vanilla
- all purpose flour
- baking soda
- cinnamon
- salt
- strawberries
Cream cheese glaze:
- cream cheese
- butter
- milk
- confectioners sugar
- vanilla
How to make Strawberry Bread:
Preheat the oven to 350 degrees then grease a 9 x 5 loaf pan.
In a medium bowl whisk the sugars, milk, oil, egg, Greek yogurt and vanilla together then in another bowl combine the 2 cups of flour, baking soda, cinnamon and salt.
Add the dry ingredients to the wet, stirring gently just until it’s combined. It’s important not to overmix the batter because it will make it dense and rubbery.
In another small bowl gently toss the diced strawberries with the 2 tablespoons of flour to coat them then fold the berries into the batter again, with minimal stirring.
Pour the batter into the prepared pan and bake 50-60 minutes or until a toothpick inserted into the center of the bread comes out clean.
TIP #1: Tent the bread with foil at 40 minutes if you see it getting too dark.
TIP: #2: Check for doneness at 50 minutes.
Let the bread cool 15 minutes on a wire rack then remove it from the pan. To make the cream cheese glaze while the bread is cooling, blend the glaze ingredients and drizzle it over the top of the bread.
This bread goes really well with a hot cup of coffee in the morning but also makes a really dessert.

- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1/2 cup plain Greek yogurt
- 2 teaspoons vanilla
- 2 cups all purpose flour + 2 tablespoons for berries
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 heaping cups strawberries diced
Cream Cheese Glaze
- 2 ounces cream cheese room temp
- 1 tablespoon butter room temp
- 3 tablespoons milk
- 3 tablespoons confectioners sugar
- 1 teaspoon vanilla
Instructions

- Pour the batter into the prepared pan and bake 50-60 minutes or until a toothpick inserted into the center of the bread comes out clean.
- Tent with foil at 40 minutes if the bread is getting too dark.
- Check for doneness at 50 minutes.
- Let the bread cool 15 minutes on a wire rack then remove it from the pan. While the bread is cooling, blend the glaze ingredients in a bowl and drizzle it over the top.
A wonderful treat. Great with coffee or your favorite after dinner beverage. I spread a little butter on mine as an added treat.
