Last week I ran a poll on Instagram and Facebook because for the life of me I couldn’t decide between making these Air Fryer Fried Pickles with a spicy dipping sauce or Air Fryer Ravioli with Marinara. I know ~ big decisions, right? It was close, but the Pickles won.

You may have already tried deep fried pickles in a restaurant but wondered if you could make air fryer dill pickle chips at home. Wonder no more.

These dill pickles are breaded then air fried using just a light spritz of cooking spray. The result is crispy, breaded tangy dill pickles served up with a creamy spicy sauce. It’s a delicious flavor explosion you can’t get enough of.

The other has been “encouraging” me to make it again but only a weekend so she can come by and have some, too. I can’t argue with that logic.

I actually do kind of enjoy the football part of the Super Bowl even though our home team wasn’t even close to being there, but let’s face it, the commercials and the food come in 1st and 2nd in my book ~ and not necessarily in that order.

Football food is pretty much the best food around, especially on Super Bowl Sunday, which gives us license to eat all sorts of food we try to stay away from the rest of the year. 

On Super Bowl, home cooks become as competitive as the players on the field with first string recipes like Chorizo Queso Dip or Sausage Wonton Cups and Jalapeno Popper Pigs in a Blanket ~ mini smoked sausages wrapped in crescent dough and filled with two kinds of cheese, jalapenos and bacon then baked until lightly golden and flaky. They’re a combination of the classic Pigs in a Blanket and Jalapeno Poppers, but better. So much better. . .

It’s hard to believe but it’s been two years since I took a leap of faith and began this food blog journey. Last year I wrote a piece on the one year anniversary, still feeling my way through after reading articles like ‘How to Start a Blog’ in just a few ‘easy’ steps.

Contrary to much of what’s online, it’s not easy and it’s not free but I’m grateful to be here, still writing and still cooking. There’s no where else I’d rather be. 

Last year in lieu of a celebratory blogiversary cake, I shared one of my favorite recipes. This year we’ll blow out a candle with these Reuben Wonton Cupcakes.
