Pepper Jelly Apple Bacon Brie Bites
Crispy baked phyllo cups filled with brie cheese, sautéed apples flavored with Holiday Pepper Jelly (cranberries and pecans) topped with crispy bacon.
- 2 slices bacon cooked to crisp
- 1 large Granny Smith apple peeled, cored, diced
- 1/3 cup Holiday Pepper Jelly
- 1 box phyllo cups (shells) 15 count
- 4 ounces brie cheese
Preheat the oven to 375° then line a baking sheet with parchment paper.
Dice the bacon, cook until crisp then remove from the skillet and set aside. Remove all but 1 tablespoon of drippings from the skillet and discard.
Peel, core and finely chop the apple then add it to the skillet. Sauté 4-5 minutes over medium heat or until the apples are tender stirring frequently. Reduce the heat to low then fold the Holiday Jelly into the apples and cook one minute.
Place the phyllo cups (shells) on the baking sheet. Remove the rind from the brie cheese and cut 15 cubes about 1/2″ in size so they fit in the cups. Add the cheese to the cups then top with about 1 rounded teaspoon of apple filling. Place 1-2 pieces of bacon on top and bake 8-10 minutes or until the cups are lightly golden. Serve warm.
