- 4 over ripe bananas
- 2 eggs
- 3/4 cup sugar + plus 1 tablespoon, divided
- 1 teaspoon vanilla
- 1/2 cup plain Greek yogurt
- 2 cups all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup pecans
Grease a loaf pan.
Mash the bananas in a medium size bowl.
Add the eggs and yogurt and combine. The battery will be lumpy with small chunks of banana
Stir in the flour, ¾ cup of sugar and baking soda then fold in the pecans.
Pour the batter into the pan. Sprinkle the remaining sugar evenly over the top.
Bake at 350 45-50 minutes (times vary depending on ovens) or until a butter knife inserted in the center comes out clean.
