  • 4 over ripe bananas
  • 2 eggs
  • 3/4 cup sugar + plus 1 tablespoon, divided
  • 1 teaspoon vanilla
  • 1/2 cup plain Greek yogurt
  • 2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup pecans


  • Grease a loaf pan.
  • Mash the bananas in a medium size bowl.
  • Add the eggs and yogurt and combine. The battery will be lumpy with small chunks of banana
  • Stir in the flour, ¾ cup of sugar and baking soda then fold in the pecans.
  • Pour the batter into the pan. Sprinkle the remaining sugar evenly over the top.
  • Bake at 350 45-50 minutes (times vary depending on ovens) or until a butter knife inserted in the center comes out clean.
