Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 8 ounce water chestnuts canned
  • 1/2 cup mushrooms chopped
  • 2 scallions thinly sliced
  • 3 tablespoons cilantro finely chopped
  • 1 head butter lettuce

Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon white vinegar
  • 3 tablespoons hoisin sauce
  • 1 tablespoon sriracha
  • 1 teaspoon corn starch

Topping:

  • 1 tablespoon hoisin sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sriracha or more to taste
  • 2 tablespoons water

Instructions

  • Drizzle the olive oil into a large skillet over medium heat. Add the ground chicken to the hot oil and season with salt, pepper and garlic powder.
  • Add the mushrooms and cook until the chicken is completely cooked through (5-7) while breaking up the meat with a wooden spoon or spatula.
  • Whisk the sauce ingredients in a bowl.
  • When the chicken is finished cooking, add the sauce, water chestnuts, scallions and cilantro. Cook over low heat for about 5 minutes while breaking up any large pieces of chicken.
  • Meanwhile prepare the topping. 
  • To assemble, add a couple of heaping tablespoons of the chicken filling to the lettuce cup and some of the topping (or just soy sauce).
