Zucchini Pizza Bites are also ideal if you’re trying to get more vegetables into your diet (aren’t we all?) or some unsuspecting kids. I mean, we’re A) talking pizza and B) there’s plenty of cheese involved. Mission accomplished.

what size zucchini should i use?

The choice is yours. I like smaller zucchini so they’re one-bite and easier to eat, but you can use larger zucchini as well. 

what’s in zucchini pizza bites?

  1. zucchini
  2. pizza sauce
  3. grated mozzarella cheese
  4. pepperoni

Other optional toppings:

  • sausage
  • bacon
  • onion
  • green pepper
  • mushrooms
  • fresh basil

how to make zucchini pizza bites:

Preheat the oven to 450° then line a baking sheet with parchment paper or foil for easy cleanup.

Wash the zucchini, trim the ends then cut into 1/4″ thick rounds (leaving the skin on). Transfer to the prepared baking sheet then lightly season with salt.

Add about one heaping teaspoon of pizza sauce onto each zucchini round, then top with a sprinkle of cheese and 1-2 pieces of pepperoni. NOTE: the amount of sauce, cheese and pepperoni will vary depending upon the size of your zucchini bite.

Bake 6-8 minutes or until the zucchini is tender and the cheese is gooey and melted then broil about 1 minute to lightly brown the cheese. Optional: sprinkle with sliced basil. Serve right away.

can i make zucchini pizza bites ahead of time?

Yes! Slice and assemble the bites then cover loosely and refrigerate until you’re ready to bake.

can i grill these zucchini pizza bites?

You can definitely grill these Zucchini Pizza Bites which makes them a great camping recipe too! Add foil to the grill then transfer the prepared bites to the foil. Grill over medium high heat (about 400°) until the cheese is melted and the zucchini is fork tender.

what about substituting squash for zucchini?

Yes! Summer squash – which is probably also going crazy in your garden can definitely be used in this recipe in place of zucchini.

how can i make this recipe even healthier?

To make this recipe even healthier than it is, use low fat cheese and turkey pepperoni. You can also leave the pepperoni off completely and go with a strictly cheese – or veggie – option.

  • 1/2 cup pizza sauce
  • 1 cup mozzarella cheese grated
  • 1-2 mini pepperoni per pizza bite
