Ingredients

  • 14.5 ounce can diced tomatoes
  • 10 ounce can Rotel tomatoes choose heat level you prefer
  • 1/2 cup fresh cilantro
  • 2 cloves garlic minced
  • 1/2 lime juiced (or more to taste)
  • 1/2 medium onion rough chopped
  • 1/2 teaspoon sea salt or more to taste
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon honey

Instructions

  • Drain the juice from the tomatoes into a bowl and set aside.
  • Add diced and Rotel tomatoes to a blender along with the remaining ingredients.
  • Pulse to your perfect texture. If the salsa is too thick, add a little of the reserved juice from the tomatoes.
  • Taste and adjust salt and lime juice to your liking. Serve with tortilla chips or top your favorite Mexican dishes.
