Apple Filling
- 5 cups apples peeled, cored and sliced
- 1/2 cup granulated sugar
- 1 teaspoon cinnamon
- 2 teaspoons all purpose flour
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- small pinch salt
Cake Topping
- 4 tablespoons butter for baking dish
- 1 cup all purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 3/4 cup milk 2% used or any regular milk
- 1 teaspoon vanilla extract
Preheat the oven to 375° then slice the cold butter and add it to a 9 x 9 casserole dish.Transfer the baking dish with the butter to the oven then let the butter melt while the oven preheats. Keep an eye on the butter and remove the dish as soon as the butter is melted. Peel, core and slice apples then add to a medium bowl along with the sugar, cinnamon, flour, lemon zest, lemon juice and salt gently tossing to coat.
In a separate bowl whisk flour, sugar, baking powder, cinnamon and salt together then fold in the milk and vanilla stirring just until combined.
Add apples to the baking dish then pour the batter over the top. It’s okay if all of the apple mixture isn’t completely covered.
Bake 30-35 minutes or until the batter is a light golden brown then remove from the oven. Serve warm - plain or with ice cream.NOTE: cooking time will vary with ovens and thickness of apples.
