Ingredients

  • 3 very ripe bananas
  • 2 large eggs
  • 3/4 cup sugar + 1 tablespoon, divided
  • 1 teaspoon vanilla extract
  • 1/3 cup plain Greek yogurt
  • 2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup pecans chopped

Instructions

  • Grease a loaf pan and set it aside.
  • Peel and add bananas to a medium bowl. Use a fork to mash the bananas (I like to leave them a little chunky).
  • Add eggs and yogurt, stirring well to combine (batter will be lumpy with small chunks of banana.
  • Stir in the flour, ¾ cup of sugar and baking soda. Once it's combined, stir in the pecans.
  • Pour the batter into the prepared pan. Sprinkle the remaining tablespoon of sugar evenly over the top.
  • Bake at 350 45-50 minutes or until a butter knife inserted in the center comes out clean. Remove from the oven and cool on a wire rack.
