- 3 very ripe bananas
- 2 large eggs
- 3/4 cup sugar + 1 tablespoon, divided
- 1 teaspoon vanilla extract
- 1/3 cup plain Greek yogurt
- 2 cups all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 cup pecans chopped
Grease a loaf pan and set it aside.
Peel and add bananas to a medium bowl. Use a fork to mash the bananas (I like to leave them a little chunky).
Add eggs and yogurt, stirring well to combine (batter will be lumpy with small chunks of banana.
Stir in the flour, ¾ cup of sugar and baking soda. Once it's combined, stir in the pecans.
Pour the batter into the prepared pan. Sprinkle the remaining tablespoon of sugar evenly over the top.
Bake at 350 45-50 minutes or until a butter knife inserted in the center comes out clean. Remove from the oven and cool on a wire rack.
