Classic Rotisserie Chicken Salad
Classic Chicken Salad with rotisserie chicken, fresh dill, celery, mayo and Greek yogurt. Protein forward, creamy and flavor-packed. Serve in croissants, lettuce cups or with crackers for a quick lunch or light summer meal.

- 2 cups cooked rotisserie chicken diced or shredded
- 1/2 cup mayonnaise or more to taste
- 2 tablespoons plain Greek yogurt or more to taste
- 1 rib celery finely chopped
- 3 tablespoons red onion minced
- 1/4 teaspoon salt or more to taste
- 1/4 teaspoon black pepper or to taste
- 1 tablespoon fresh dill finely chopped
- 1 teaspoon fresh lemon juice or more to taste
To a large bowl, add the diced rotisserie chicken, mayonnaise, Greek yogurt, celery, red onion, fresh dill, salt, black pepper and lemon juice.
Stir until everything is evenly combined. Taste and adjust the seasoning with additional salt, pepper or lemon juice as needed.
Cover and chill in the refrigerator for at least 30 minutes so the flavors can blend together. Serve on flaky croissants with lettuce and tomatoes or enjoy it as lettuce wraps for a lighter option.
