- 1 pound fresh strawberries
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla
Wash the strawberries then remove the leaves and stems. Hull and slice them into small chunks. The size will vary based on the size of your strawberries and preference.
In a small-medium sized saucepan add the strawberries, white sugar, lemon juice, and vanilla and place the pan on the stove over medium heat.
Allow the mixture to boil for about 8-10 minutes without a lid. It’s important to let the sauce breathe, it allows some of the liquid evaporate to create a syrupy-sauce. Stir frequently to prevent the mix from burning to the bottom. When it’s done, the strawberries should be soft and a syrup should have formed. Should you need more to get to a syrupy consistency, add 2 minutes to your cook time until consistency is achieved. Let it cool and serve at room temperature. Serve over ice cream with whipped cream, nuts, and a maraschino cherry, cheesecake, waffles or crepes.
