Honey Orange Chicken ~ better than takeout!  Citrusy Asian flavored tender chicken pieces in a delicious sauce served over rice.

Ingredients

Honey Orange Chicken Ingredients:

  • 1 pound of boneless chicken cut in 1” cubes
  • 2 tablespoons of vegetable oil
  • 2 cloves of garlic grated
  • salt and pepper to taste
  • 2 cups of chopped vegetables of your choice  suggestions: onions, carrots, bell peppers, edamame, sugar snap peas, broccoli, mushrooms, zucchini
  • Note: these vegetables are suggestions. Choose 3 or 4  of your choice but not all of them).

Sauce:

  • 1/2 cup orange juice
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons cornstarch
  • ½ teaspoon ground ginger
  • Juice and zest from one medium size orange
  • 2 teaspoons sriracha or more to taste Note: sriracha can be completely omitted.
  • 1/4 cup chicken stock
  • 1/4 teaspoon each of salt and pepper

Instructions

  • Heat the oil in a large skillet over medium to medium-high heat then season the chicken with salt and pepper. Add it to the skillet browning on both sides until it’s cooked through then remove it from the skillet.
  • Add the vegetables to the skillet, season with salt and pepper, cook 2-3 minutes then grate in the garlic and continue cooking another 1-2 minutes.
  • Return the chicken to the skillet, combine with the vegetables and reduce the heat to low.
  • Whisk the sauce together making sure to completely combine the honey, then pour it into the skillet scraping up any brown bits from the bottom of the skillet. Cook a few minutes, stirring frequently until the sauce thickens.
  • Serve over rice or noodles.
