Honey Orange Chicken Ingredients:
- 1 pound of boneless chicken cut in 1” cubes
- 2 tablespoons of vegetable oil
- 2 cloves of garlic grated
- salt and pepper to taste
- 2 cups of chopped vegetables of your choice suggestions: onions, carrots, bell peppers, edamame, sugar snap peas, broccoli, mushrooms, zucchini
- Note: these vegetables are suggestions. Choose 3 or 4 of your choice but not all of them).
Sauce:
- 1/2 cup orange juice
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 tablespoons apple cider vinegar
- 2 tablespoons cornstarch
- ½ teaspoon ground ginger
- Juice and zest from one medium size orange
- 2 teaspoons sriracha or more to taste Note: sriracha can be completely omitted.
- 1/4 cup chicken stock
- 1/4 teaspoon each of salt and pepper
Heat the oil in a large skillet over medium to medium-high heat then season the chicken with salt and pepper. Add it to the skillet browning on both sides until it’s cooked through then remove it from the skillet.
Add the vegetables to the skillet, season with salt and pepper, cook 2-3 minutes then grate in the garlic and continue cooking another 1-2 minutes.
Return the chicken to the skillet, combine with the vegetables and reduce the heat to low.
Whisk the sauce together making sure to completely combine the honey, then pour it into the skillet scraping up any brown bits from the bottom of the skillet. Cook a few minutes, stirring frequently until the sauce thickens.
Serve over rice or noodles.
