Raspberry Mint Mojito

- 2 shots (1 ½ ounces each) of Havana Club or other white rum
- 4 teaspoons granulated sugar
- 6-8 mint leaves + extra for garnish
- 1 lime thinly sliced
- Club soda
- 10-12 raspberries + extra for garnish
Add three slices of lime to the bottom of a short glass then sprinkle on the sugar and add the mint leaves and raspberries.
Muddle the lime, sugar, mint and raspberries together by placing the muddler in the glass and pressing down gently on the leaves giving it 6-8 twists (you don't want to over muddle or the mint can become bitter).
Add the rum and ice, top it off with club soda then stir well and garnish with extra berries, a couple of sprigs of mint and a slice of lime. Serve right away.
