Equipment

  • large skillet

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 14 ounces smoked sausage or any you prefer!
  • 1 1/2 pounds yukon gold potatoes cut in 1/2" cubes
  • 1 large bell pepper
  • 1 small yellow onion diced
  • 1/2 teaspoon garlic powder
  • salt and black pepper
  • 1 teaspoon dry Italian seasoning

OPTIONAL:

  • 1 1/2 cups fresh kale or spinach thinly sliced/shredded

Instructions

PREP:

  • Slice sausage about 1/2″ thick.
  • Dice the potatoes, onions and peppers into 1/2″ cubes. I left the peel on the potato but peel if you prefer.
  • Drizzle olive oil into a large skillet over medium heat. Add sausage slices in a mostly single layer.
  • Cook 2-3 minutes to golden on the first side then flip them over and cook another 2 minutes until browned then remove from the skillet to a plate.
  • Add the potatoes, onions, peppers and butter to the skillet with the sausage drippings.
  • Sprinkle on the Italian seasoning, garlic powder, black pepper and a good pinch of salt. Cook 8-10 minutes or until potatoes are golden brown and fork tender stirring occasionally. NOTE: If your potatoes are golden but not yet tender,  splash in a little water and continue cooking.
  • Reduce heat to low add OPTIONAL: kale or spinach and cook 1-2 minutes until it's wilted in.
  • Return the sausage to the skillet then cook 2 minutes to reheat the sausage and let the flavors come together.

Notes

I used smoked kielbasa in this recipe but any sausage will work including chicken sausage or any fresh sausage.
