- 2 - 2 1/2 pounds boneless chicken can use boneless thighs
- 1 1/2 cups store bought barbecue sauce Sweet Baby Ray's Spicy-Sweet used
- 1 small onion diced
- 2 tablespoons apple cider vinegar
- 2 tablespoons brown sugar
- 1/2 teaspoon liquid smoke
- salt and pepper
- rolls or Texas Toast
- cole slaw (optional)
Add the barbecue sauce, diced onion, apple cider vinegar, brown sugar and liquid smoke to the slow cooker then stir to combine.
Place the raw chicken on top of the sauce then turn to coat it and season with salt and pepper.
Cover and cook 3 to 3 1/2 hours on high or 5 to 5 1/2 hours on low. Check it at the earliest time so you don’t overcook the chicken (it's done when you can easily pull it apart with a fork).
Remove the chicken from the slow cooker onto a cutting board or plate then turn the heat up to high in the slow cooker and let it simmer to reduce further (about 5 minutes).
Shred the chicken then return it to the slow cooker and toss it in the sauce coating well. Serve on rolls or Texas Toast with cole slaw and pickles.
