1smallseedless watermelonor 1/4 of large seedless watermelon
6ounceblock feta cheese
1pintblueberries
fresh mint leaves
Instructions
Cut watermelon into approximately 1″ cubes.
Blot excess moisture from feta then cut into cubes slightly smaller than the watermelon.
To assemble, skewer one small mint leaf, a couple of blueberries, a feta cube and finish with a watermelon cube.
Repeat until all ingredients are used. Transfer to the fridge for 10-15 minutes. OPTIONAL: drizzle with balsamic reduction then serve immediately (NOTE: wait to drizzle balsamic until just before serving.
