White Spinach Queso

White Spinach Queso - Chili's copycat - warm, spicy cheese dip with fresh spinach. Easy 20 minute stovetop appetizer. Always a hit!

Ingredients

  • 3 tablespoons butter
  • 1 fresh jalapeno seeded and finely minced
  • 1 cup fresh spinach chopped
  • 1 small tomato (such a Roma) seeded and diced (1/2-3/4 cup)
  • 2 tablespoons all purpose flour
  • 1 cup milk 2% used, can use whole milk
  • 2 ounces cream cheese softened to room temp
  • 4 ounce can green chiles
  • 2 cups pepper jack cheese freshly shredded
  • salt to taste

Instructions

  • Melt butter in a deep skillet or saucepan over medium heat. Add jalapeno and chopped spinach. Season lightly with salt and cook for 2 minutes or until the spinach has wilted.
  • Reduce heat to low then sprinkle flour over the top, toss to coat well then cook 1 minute stirring frequently.
  • Slowing whisk in the milk, stirring until the sauce is smooth.
  • Remove from the heat and stir in cream cheese and green chiles. Once it's blended, add the pepper jack cheese stirring until it's smooth then add the seeded, diced tomatoes and season with salt to taste.
  • Serve right away with tortilla chips.

Notes

As always - I recommend grating your own cheese. Prepackaged shredded or grated cheese contains additives that prevent it from giving the smooth melty texture we crave.
For added heat, sprinkle in ground cayenne pepper to taste.
