- 1 store-bought flatbread
- 8 ounces baby bella mushrooms sliced
- 1 small onion peeled and very thinly sliced
- 2-3 ounces goat cheese
- balsamic glaze
- salt and black pepper
- olive oil
- 1 tablespoon butter
- 1 tablespoon worcestershire sauce
- 1 tablespoon fresh herbs (thyme, rosemary or dill) or 1 teaspoon dry herbs
- 1 tablespoon fresh parsley optional garnish
Preheat oven to 400 degrees. Line a large baking sheet with parchment paper. Place flatbread on top, brush lightly wtih olive oil then bake 5 minutes or until very lightly toasted. Remove from the oven and set aside.
Slice mushrooms. Peel and very thinly thinly slice onion. Add 1 tablespoon each olive oil and butter to a large skillet over medium-high heat. Transfer onions to skillet. Season with salt and black pepper. Cook 4-5 minutes or until light golden.
Add mushrooms to the same skillet over medium heat. Season lightly with salt and black pepper. Cook 5-7 minute or until golden. Splash in 1 tablespoon of worcestershire sauce, stir and cook 1 more minute.
Spread sauteed mushrooms and onions over the flatbead. Top with small dollops of goat cheese. Bake 6-7 minutes or until the cheese is softened and very light golden (optional: broil 1-2 minutes).
Remove from the oven, drizzle balsamic glaze over the top and (optional) fresh chopped parsley. Slice and serve with extra balsamic glaze at the table.
