Air Fryer Chicken Fajitas

Ingredients

  • 1 pound boneless chicken breasts or thighs sliced into thin strips
  • cooking spray

Fajita Seasoning:

  • 1 tablespoon chili powder
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • pinch cayenne pepper optional
  • 1 tablespoon oil

Vegetables:

  • 1 small red onion sliced in 1/2" thick slices
  • 1 whole bell pepper seeded and sliced in 1/2" thick slices
  • 1 small green pepper seeded and sliced in 1/2" thick slices
  • 1 tablespoon lime juice or to taste
  • flour or corn tortillas

Instructions

  • Thinly slice the chicken into strips then slice the peppers and onions into 1/2" thick strips.
  • Combine the chili powder, salt, pepper, cumin, garlic powder, (optional) cayenne pepper and oil in a medium to large bowl then add the sliced chicken strips and vegetables. Stir to coat well.
  • Preheat the air fryer at 400 degrees then spray the inside of the air fryer basket with cooking spray.
  • Add the chicken and vegetables to the air fryer basket. Cook 10 minutes pausing to give the basket a good shake halfway through the cook time.
  • NOTE: Cooking time will vary with air fryers. Cook the chicken to an internal temp of 160-165 degrees and so the vegetables are tender.
  • Remove from the air fryer, (optional) squeeze a little lime juice over the top and serve right away with tortillas and your favorite toppings and sides.
