Air Fryer Chicken Fajitas

- 1 pound boneless chicken breasts or thighs sliced into thin strips
- cooking spray
Fajita Seasoning:
- 1 tablespoon chili powder
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon black pepper or to taste
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- pinch cayenne pepper optional
- 1 tablespoon oil
Vegetables:
- 1 small red onion sliced in 1/2" thick slices
- 1 whole bell pepper seeded and sliced in 1/2" thick slices
- 1 small green pepper seeded and sliced in 1/2" thick slices
- 1 tablespoon lime juice or to taste
- flour or corn tortillas
Thinly slice the chicken into strips then slice the peppers and onions into 1/2" thick strips.
Combine the chili powder, salt, pepper, cumin, garlic powder, (optional) cayenne pepper and oil in a medium to large bowl then add the sliced chicken strips and vegetables. Stir to coat well.
Preheat the air fryer at 400 degrees then spray the inside of the air fryer basket with cooking spray.
Add the chicken and vegetables to the air fryer basket. Cook 10 minutes pausing to give the basket a good shake halfway through the cook time.
NOTE: Cooking time will vary with air fryers. Cook the chicken to an internal temp of 160-165 degrees and so the vegetables are tender. Remove from the air fryer, (optional) squeeze a little lime juice over the top and serve right away with tortillas and your favorite toppings and sides.
