Air Fryer Honey Glazed Carrots

Easy air fryer carrots with a delicious honey-butter glaze. Mix everything in one bowl, add to air fryer and in about 10 minutes you'll have this delicious side dish that goes with almost everything!

Ingredients

  • 1 to 1 1/2 pounds carrots baby carrots used - any work well
  • 3 tablespoons butter melted
  • 1 tablespoon olive oil
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme removed from stem and minced
  • 1/2 teaspoon salt or more to taste
  • 1/4 teaspoon black pepper or more to taste
  • cooking spray
  • optional garnish: 1 tablespoon fresh parsley chopped

Instructions

  • Preheat air fryer to 400 degrees then lightly spray the air fryer basket with cooking spray.
  • Remove thyme leaves from sprigs and finely mince.
    Melt butter in a large bowl then add olive oil, honey,  minced thyme, garlic, salt and pepper. Whisk to combine.
  • If you’re using full size carrots, peel and cut them into 1-inch to 1 1/2 inch pieces. If using a bag of baby carrots, just add them to the bowl with the honey butter. Toss to coat well. 
  • Working in batches if necessary, add carrots in a mostly single layer to the air fryer basket.
  • Air fry 8-10 minutes depending upon size of carrots (or until tender) shaking the basket about halfway through cooking. 
  • Transfer carrots to a plate or bowl. If you air fried in batches, return all cooked carrots to the air fryer and warm for 1-2 minutes at 350 degrees.
  • Place in a serving plate or bowl. Garnish with fresh chopped parsley or extra thyme sprigs and if you’d like a light sprinkle of sea salt.
