- carrots (baby carrots used – any work well)
- melted butter
- olive oil
- honey
- fresh thyme
- garlic clove
- sea salt and black pepper
- cooking spray
optional garnish: 1 tablespoon fresh parsley chopped
HOW TO MAKE AIR FRYER HONEY GLAZED CARROTS:
Preheat air fryer to 400 degrees then lightly spray the air fryer basket with cooking spray.
Remove thyme leaves from sprigs and finely mince.
Melt butter in a large bowl then add olive oil, honey, minced thyme, garlic, salt and pepper. Whisk to combine.
If you’re using regular carrots, peel and cut them into 1-inch to 1 1/2 inch pieces. If using a bag of baby carrots, just add them to the bowl with the honey butter. Toss to coat well.
Depending upon the size of your air fryer, work in batches if necessary, adding carrots in a mostly single layer to the air fryer basket.
Cook for 8-10 minutes (or until tender) shaking the basket about halfway through cooking.
Transfer carrots to a plate or bowl. If you air fried in batches, return all cooked carrots to the air fryer and warm for 1-2 minutes at 350 degrees.
Place on a serving plate or bowl. Garnish with fresh chopped parsley or extra thyme sprigs and if you’d like a light sprinkle of sea salt.
HOW TO SAFELY STORE LEFTOVERS:
Cool carrots completely then transfer to an airtight container. Store in the fridge up to 3 days.
Reheat in the air fryer or microwave.
