Pound thicker chicken breasts to about 1/2″ thickness OR slice lengthwise to about 1/2″ thickness.
Preheat the air fryer to 400° then spray the air fryer basket with cooking spray.
Set up a dredging station for the panko parmesan coating in three bowls: #1 flour, #2: beaten eggs + 1 tablespoon water, #3: combine panko bread crumbs, parmesan cheese, paprika, garlic powder, salt and pepper.
Dredge each piece of chicken in flour to thoroughly coat shaking off an excess.
Dip in egg then coat in breadcrumb mixture. Continue until all of the chicken pieces are breaded.
Place chicken pieces in the air fryer basket in a single layer then lightly spray the top of each chicken breast with cooking spray.
Air fry 6 minutes then turn each piece over. Continue cooking another 5-6 minutes or until the chicken reaches an internal temperature reaches 165 degrees. NOTE: cooking time will vary with the thickness of the chicken and individual air fryers.
