Best Air Fryer Chicken and Potatoes

- 1 pound baby gold potatoes
- 1 tablespoon olive oil
- salt and black pepper
the chicken
- 4 bone in chicken thighs can sub breasts (cut in half)
- 1 small lemon juiced (optional garnish with zest)
- 1 tablespoon oregano
- 1 tablespoon paprika
- 1 teaspoon dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
the cheesy garlic sauce
- 2 tablespoons butter melted
- 3 tablespoons grated parmesan cheese
- 1/2 teaspoon garlic powder
Wash, dry and halve baby potatoes (if using larger potatoes cut in about 1″ chunks. Add to a bowl, drizzle with olive oil and season with salt and pepper. Set aside.
Blend olive oil, lemon juice, oregano, paprika, Dijon mustard, salt, pepper and garlic powder in a small bowl. Use paper towels to pat chicken dry. then add to spices, turning evenly coat.
Preheat air fryer to 375° for 3 minutes. Add potatoes in a single layer. Place chicken pieces on top, skin side down.
Air fry for 10 minutes. Flip chicken to the other side. Continue cooking 6 more minutes or until chicken is cooked to an internal temp of 165 degrees.
While the chicken is cooking melt butter and blend with garlic power and parmesan cheese.
Once chicken reaches 165 internal temp, brush top and sides with garlic butter, increase air fryer temp to 400 degrees and continue cooking 2-3 minutes until skin is crispy and golden.
