- 1 pound baby gold potatoes
- 1 tablespoon olive oil
- salt and pepper to taste
the chicken:
- 4 bone in chicken thighs
- 1/2 lemon juiced (optional: zest for garnish)
- 1 tablespoon oregano
- 1 tablespoon paprika
- 1 teaspoon dijon mustard
- 1 teaspoon salt

- 3 tablespoons grated parmesan cheese

How to Make this Air Fryer Chicken and Potatoes recipe:
Step 1: Prep Ingredients
Wash, dry and halve baby potatoes (if using larger potatoes cut in about 1″ chunks. Add to a bowl, drizzle with olive oil and season with salt and pepper. Set aside.
Use paper towels to pat chicken dry. This will give you a crispy, golden finish.
Step 2: Make the Seasoning Mix
To a small bowl, blend olive oil, lemon juice, oregano, paprika, Dijon mustard, salt, pepper and garlic powder. Add chicken, turning to evenly coat.
