Best Breakfast Pizza

Equipment

  • large baking sheet
  • parchment paper optional: for easier cleanup

Ingredients

  • 2 personal size naan breads
  • 1/2 tablespoon olive oil
  • 2 large eggs
  • Everything Bagel Seasoning to taste (or sub salt and pepper)
  • 2/3 cup smoked gouda cheese shredded (can sub any melty cheese)
  • 2 tablespoon parmesan cheese
  • 4 slices bacon cooked to crisp and diced
  • 1/2 cup microgreens can sub spinach

Instructions

  • Preheat oven to 400 degrees then line a large baking sheet with parchment paper.
  • Place naan bread on the baking sheet and lightly brush with olive oil.
  • Sprinkle shredded cheese over the top of the naan then add cooked bacon around the edges.
  • Add a small pile of microgreens pressing in the center ot form a nest for the egg.
    Crack the egg into the 'nest' then season with Everything Bagel (or salt and pepper) along with a sprinkle of parmesan cheese.
  • Bake 8-10 minutes or until the egg whites are set. Optional: switch to broil for 10-20 seconds until the cheese is golden brown. Eat right away.
