Equipment

  • hand mixer or stand mixer

Ingredients

  • 4 ounce block cream cheese softened to room temp
  • 2 cups freshly grated sharp cheddar cheese
  • 1/4 cup mayonnaise
  • 1 teaspoon worcestershire sauce
  • 1/4 teaspoon ground cayenne pepper or to taste
  • 1/2 teaspoon garlic powder
  • salt and black pepper to taste
  • 4 ounce jar pimento peppers drained well
  • 2 tablespoons Mike's Hot Honey + 1 teaspoon for drizzle

Instructions

  • Shred cheddar cheese on a box grater then add to a large mixing bowl along with softened cream cheese, mayonnaise, Worcestershire, cayenne pepper, garlic powder, salt, black pepper and 2 tablespoons hot honey.
  • Blend using a hand mixer or stand mixer until smooth (I don't recommend using a food processor) then stir in drained pimentos.
  • Taste and adjust salt and pepper then transfer to an airtight container and store in the fridge at least 15 minutes (up to overnight) before serving
  • Prior to serving, remove from the fridge and bring to room temp so it'll spread easier then drizzle about a teaspoon of hot honey over the top.

Notes

Can use extra sharp cheddar cheese for stronger cheddar taste.
Grate/shred your own cheese for best flavor.
Serve with crackers (Ritz is my favorite), tortilla chips and fresh cut vegetables.
