Black Eyed Pea Hummus

Equipment

  • food processor or high powered blender

Ingredients

  • 15 ounce can black-eyed peas drained
  • 2 tablespoons olive oil
  • 2 tablespoons tahini paste
  • 2 tablespoons lemon juice
  • 1/2 teaspoon EACH garlic powder, cumin, paprika and salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons water or to desired consistency

Instructions

  • Drain black eyes peas then add to the bowl of a food processor.
  • Add tahini paste, garlic powder, lemon juice, salt, black pepper, paprika and water.
  • Pulse until combined then drizzle in olive oil and puree until the hummus is smooth. If needed, splash in a little more water. Taste and adjust for salt.
  • Transferf to a bowl with toasted pita, fresh vegetables and crackers.
