Cold Veggie Christmas Tree Pizza made with crescent dough sheets and topped with hummus and a confetti of fresh vegetables. A healthier holiday appetizer.
2cupsfinely chopped fresh vegetablesbroccoli, carrots, bell peppers used
1cuphummus
1tablespoonall purpose flour
Instructions
Preheat the oven to 375 degrees then line a baking tray with parchment paper.
Sprinkle flour on a smooth surface then unroll the dough. Using a rolling pin, press gently until the piece of dough is uncurled and an even shape.
Cut Christmas tree shapes with a cookie cutter to form the pizza crust, rerolling the dough to get as many trees as possible (number will vary with the size of the cookie cutter).
Carefully transfer the trees to the prepared baking sheet and bake 10-12 minutes or until lightly golden brown.
Remove from the oven then transfer the trees to a wire rack and cool completely before adding any toppings.
Finely chop the vegetables then toss together for a confetti look.
Spread 1 heaping teaspoon of the hummus mixture on each tree then add a sprinkle of vegetables. Loosely tent with aluminum foil then refrigerate at least 15 minutes before eating.
