nonstick cooking spray for the wire rack
- 2 pounds bone in chicken wings drummys, flappers or a combo
- 1 tablespoon baking powder not baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons your favorite dry BBQ rub Meat Church Brand (honey hog is my favorite)
Move oven rack to upper middle section. Preheat oven to 425 degrees.
Line baking sheet with aluminum foil. Place wire cooling rack on top and spray rack with cooking spray so wings don't stick to it.
Pat wings dry really well using paper towels. This is super important so the wings crisp and not steam. Once dry, add to a large bowl.
In a small bowl, whisk salt, black pepper, 2 tablespoons of the dry BBQ rub and 1 tablespoon baking powder. Sprinkle seasoning over wings. Toss well until wings are evenly coated. Place on rack/baking sheet in a single layer.
Bake 20 minutes. Flip to the other side. Sprinkle with remaining tablespoon of dry BBQ rub and return to the oven for 20-25 minutes or until golden, crispy and cooked to internal temp of 165 degrees. NOTE: Cook time may vary with size of wings.
Wings are finished and ready to eat but if you prefer – transfer to large clean bowl, drizzle with BBQ sauce and toss to coat. Serve right away.
